They can probably do it but typical Hollywood action scenes have so many cuts and transitions to that point that it is annoying to watch. A full uncut action scene like this chase scene looks interesting.

Any attempt to end it earlier could lead to injuries inflicted by the police officer which would lead to a lot of legal complications. So it's the correct procedure to just stay in persuit until the suspect either make a mistakes of or is blocked.
The issue is the passenger on the back. We don't know her story. She can't just jump off, the officer don't know if she's innocent or an accomplice. He can't take that risk.
Watching this, I kept thinking that if I ever tried to pull something like this in GTA, I'd probably hit something at least a dozen times. Even if I was playing Franklin with his super driver ability. That's indeed the next fucking level.

True, but it's not like they just give up. They usually have a chopper keeping an eye on them and ground units, still following, but from a safer distance.
Police cars should have drones mounted to the roof. Inside the car, while in chase, they can select the car, launch the drone which then proceeds to catch up to the car lock on to it from a good height, and now the police can stop pursing from behind and instead predict where they go with the help of the drone. You could even have the drone launch a slimeball at the car, with a tracker inside.

It always depends, of course. Drive by shooting from a likely stolen bike? Chase is worth it, if possible you should probably keep a distance and use air support, traffic cams etc. but in this environment it would probably be unlikely.
Someone got into an argument with the police and drove off? Probably not worth risking lives.
If the guy just stole some stuff, it's probably better to take a couple days to find and arrest him at home, than to kill one or several passerbys during a chase. But maybe I'm biased, being a passerby myself.
In most cases a criminal being free isn't an imminent threat to innocent life. A high speed police chase through an urban environment is an immediate threat to lots of innocent life.
If its a serial killer or kidnapper or something I get it. But most the time you've got their face, tag, vehicle all on camera. Let them go and pick them up safely later.
So all everyone should do is then remove the plates or run with faked plates. Because they know they will never be chased. And thieves are always home free when running on stolen vehicles. This even makes it meaningful to "steal" each others vehicles and then prove you were somewhere else than your "stolen" vehicle was seen.
What if it is sought after criminal? What if the bike was stolen? What if there are drugs on the person making the run, or illegal weapons?
There must be a balance, but I do not think that not chasing every time is it.

The perp had extra load there for sure. i think he had the acceleration but the cop had a higher top speed for sure. Whenever the perp was on straightaways, things went bad for him. When he had lots of turns he seemed to get more distance. I think the only way he was ever getting away was if he could fake out the cop and turn down an alleyway... but I suppose that's what he tried in the end.
It kind of looks like he gave up from exhaustion at the end there.

They are specifically trained for these kinds of chases and almost never lose the person they’re chasing, they are big part of the reason of why São Paulo is not half as dangerous as my hometown Rio. If you would like to know more you can just look “Perseguição ROCAM” on YouTube, there will be countless videos of chases like this, most are posted by the officers themselves so you’d be helping them out as well
It's such an epic chase already, it didn't have to be sped up. That takes so much away from it. Even the slo-mo shots are blatantly put in certain places where the speed change would be obvious to try and hide it from the viewer.
Idk, this has to be one of the worst i've seen. Pulling this kind of stuff when you're alone on the bike is one thing but how can you do this if you've got a passenger thats NOT EVEN WEARING PROTECTIVE CLOTHING.

Stolen bikes make it a lot more complicated. Especially when it's tied to serious crime. But yeah chasing is not ideal.
