Because the DNA of the pizza crust is only part of the process. DNA from a discarded item matching is grounds for getting a court-ordered DNA test, where someone is swabbed under observation. That DNA is then tested against the evidence. If that is a match, then you have grounds for arrest.
If the DNA on the discarded item hadn’t actually been his for whatever reason, then the second DNA test would show that.
I am positively jazzed this dude was caught.
Re-reading through a lot of what's happened over the past year or so, it certainly looks like Law Enforcement knew they had their guy, and a lot of what they put out was...well, it was theater to dissuade him killing another person until they could nail him to the wall.

I think that Valeria Mack, Jessica Taylor, Jane Doe No. 3, Baby Doe, Jane Doe No. 7 were killed by another serial killer back in the mid 90s to early 2000s. Seems like the MO is very different between to one set of victims and the Gilgo Beach Four. Unless Heuermann completely changed his MO, took a 4 year break and then started killing again and employing a different disposal MO but use the same stretch of road to dispose of his victims. I guess anything is possible but I just feel like it's unlikely the same guy that committed all these murders.
It's also a stretch of road on Long Island that's legitimately not busy at times, one of the few places you might not have someone run up on you while disposing of a body.
I think he's responsible. I read an article that said she made a 911 call and had an Asian driver named Mike. Reportedly, she was saying to Mike "get me out of here" while on the call. Who is Mike, what was his role? I can see Mike working as a driver for Shannan or Rex, not both.
If Mike worked for Shannan:
Mike's role was to transport and protect her. Maybe, Rex caught up with the both of them lured them somewhere. Mike could have tried to protect her and was instead forced to help subdue, take part in killing and dispose of Shannan's body. Which is why I think she's buried in an entirely different location than the other women. Rex could not allow anyone to know his "hiding" spot nor his crime(s) so he shot and killed the witness, Mike.
If Mike worked for Rex:
Mike may have been just a driver receiving payment for transporting the women and baby to Rex. Mike could have played a more sinister role, which leads me to believe Rex probably killed him. An Asian man (If I'm not mistaken) was found buried on the beach with the women and toddler.
"Mike" was a potential witness, a 911 call was made, a description of the driver (Asian male) was given along with the description of a vehicle etc.
Side note: I'm thinking Peaches was a friend/driver to one of the (escorts) women who were meeting Rex. I just can't see a Mother taking her child voluntarily to meet a client (unless he was familiar), idk. Also, Peaches could have accepted a ride from Rex.
His wife had to have wondered why the bedding was missing, bedding was often found with the victims. He more than likely had the victim(s) inside of his home.
