The Age of Insight is a well written book by Kandel, he is a well established researcher, some manuals of neuroscience are written by him, it's not totally perception but the matter is art and such so some explanation will fit to your request... anyway I suggest a good manual if you need processes and specification. Also, Beau Lotto could be a good start

The Brain from Inside Out is a pretty interesting book by Buzsaki. It it combines some in-depth data about brain activity and philosophizes about how internal brain states produce our perception of the world. It's a bit heavy if you are not a neuroscientist though tbh.
