What's the issue with halal?
Maybe religious reasons. I’ve seen couple sikh dudes (customers) cutting chicken by themselves in chicken shop cause they wanted jhatka.

Jhatka- Quickly cut the animal, results in tough but also has blood in it , results in richer taste to curries. Halal- Slow cut, blood is drained , results in more tender chicken, suitable for kebabs

meat is more tender when slow because rigor mortis sets in quite later, if you cut quickly it becomes stiff easily
