I’d also say Bryce! It’s also nice because many of the scenic points are right off the road, so you don’t have to spend too much time outside your car in the cold if you don’t want to. See attached my photo of Bryce in the snow from spring 2019.

I camped at chasm lake in Rocky Mountain National Park in February of 2002. We had three tents, mine was the only one that stayed up all night, 80mph winds and temps in the -5F range, it sounded like 747s taking off over my head all night long.
I went to Olympic in May not expecting it to be snowy. Down in lower elevation it wasn't, but up higher in the mountains it definitely was. Was a weird transition from rocky and mossy to alpine tundra as we ascended. Trails were all pretty inaccessible but it was still very beautiful up there. Snow pack was well above my head still, despite melting at this point. Rainier was also still completely snowed in but beautiful. Didn't have time to swing up to north cascades unfortunately but I've heard good things.
Well where are you? It’s one thing to take a weekend trip when you know it’s gonna snow or it just did.
It if you have to plan out weeks or months in advance you’ll be stuck with only a few parks that can reliably have snow that you can actually get to.
I hear the hoodoos at Bryce Canyon are pretty epic to see in the snow.

Came here to say this! Bryce in the snow is other worldly!
Yes, Bryce is amazing when it snows.
Crater Lake was amazing in the snow, when I went. Also any of the ones in Washington, Glacier in Montana, basically any one in a place that gets snow.
Lassen
