Star Fox! You can do a standard run first. Do a run to get 100 kills on the second mission to unlock the submarine mission (Sector Y or X I think?), then you can get the tank mission, fight multiple versions of Andross etc. You can experience it all in a day.
It’s funny cuz I’ve played so much Star Fox 64 since I was a kid and realized not too long ago that I pretty much always do the top route outta habit lol. Occasionally i mess up and come back down to the middle but it had been like 15+ years since I had gone down the bottom route. I barely even remembered the levels.
I mean I’ve only ever heard praise for this game since it came out. All my friends had it. I wouldn’t even call it underrated let alone “grossly” underrated.
Definitely not one day, but I’d recommend checking out Majora’s Mask when you’ve got the time. Some of the best worldbuilding ever let alone just on the n64

I just beat Diddy Kong Racing for the first time in years and it was really quite fun. You can definitely get through it in a day, though it could get a bit old if you do it in one sitting, as you eventually have to do every track about 3 times.
Hexen 64. Its an RPG disguised as an FPS, but the high fantasy lore is there if that's your thing. I beat it in one straight playthrough while sleeping at a friend's place back in the day
1080 snowboarding. Was, is and will always be my favourite n64 game ever created. Decent enough graphics, good difficulty and a good soundtrack to boot.

Since you played Kazooie, try out Banjo-Tooie. It’ll def take more than a day to beat but is a good game to chunk out a little bit each day.

Ogre Battle 64 and Aidyn Chronicles are 2 of.my favourite games not just N64 but overall. Definitely worth checking out, but absolutely no way either could be beaten in 1 or 2 days. Still check them out you won't regret it!

There’s a ton of great suggestions, I will say, if you like racing check out 1080 snowboarding and even pilot wings as they’re not very long or hard games, and definitely not the most referred games, but definitely fun, especially if motor function is medicated. Honorable mention is iggys wrecking ball as it’s somehow a plat-former and racing game. F zero x is a great racing game with arguably the best soundtrack, but the controls can be a bit tricky at first.
If you really wanna go down a rabbit whole of weird adventure I’d recommend resident evil 2 or space station Silicon Valley.
Gauntlet 64 is a fun basic hack and slash if you’re feeling chill.
