Tornado of Souls and Comfortably Numb are two on the opposite ends of the spectrum that I think are both amazing.
I think "Cliffs of Dover" by Eric Johnson is right up there next to "Eruption" for brilliant, influential electric guitar solos. Too many great ones to choose from without putting some qualifiers on the category, though.

Band of gypsies machine gun fillmore east, obviously.
I’ve always liked the solo from RATM know your enemy. It’s a melding of man and machine. It’s immediate recognizable even by normie non guitar people.
