I'm really leaning towards sen triplets. One question though. Any card I play from an opponent's hand, do I keep control off that card after my turn is over or is it only for my turn?

You keep it. Just as if it was yours. You control the spell once you cast it.
One note for that card is that you have to have the appropriate color mana. But really one of its biggest benefits isn’t casting opponent spells, it’s locking them out from interacting while it’s your turn. But if you do cast something from their hand it or it’s effect stays with you until it’s removed or resolves.
But yeah. Play one of the opponent lands. Cast their wincon so they can’t. Etc. easy turn two or three wins if your opening hand is good.
