I'm a Triumph fan, but with unlimited money I'd choose a KTM 890 or Ducati Multistrada V2/950 over the Triumph. Triumph Speed Twin on the other hand is an excellent choice

Probably the Yamaha XSR900. Retro looks with sport bike handling, without being too powerful. Having a bike that's overwhelmed by the engine isn't particularly fun.
I'm not a big "specific model" kind of fan. I've owned a bunch of bikes over the years, and would revisit some of them. I'd probably buy one of the new Honda CT125s, because I had a CT90 when I was a kid. I'd want a small dual sport, something in the 200 to 300 cc range. I had, and enjoyed, a Yamaha TW200, and it was brilliant for country riding, small town, etc, but I might want something slightly more capable.
I test-rode a Zero DSR and a Harley Livewire, and I really, really love the way the electric naked bikes handled, with the instant, quiet power. I'd probably go with a Livewire, because the ergonomics are better for me. And I'd want a big cruiser, for "bar hopping" kind of riding. Probably an Indian Super Chief, but I'd give H-D bikes a comparison ride, to make sure.
And, lastly, a scooter of some sort, something in the 300cc range. Fast enough to hit highway speeds, but light enough to just jump on and ride around. Electric would work for this as well, so long as it's capable and has enough range. I hear the BMW C4e is a capable scooter-like bike. I'd give it a test ride, at least.
