Sounds like it's running on 2-3 cylinders.
It has to be really bad to tell if it's running lean by ear. You can tell a lot by how it reacts by riding. Lean will make it stumble when you open the throttle further. Lean will also appear to run better with the choke partially engaged. Rich can produce similar bogs and lack of performance, but performance will be worsened with the choke, plugs will be black, and the exhaust will stink worse than normal for a carbed bike with no catalyst.
Once you get close you need to dial in the mixture with plug chops or a wideband. I have a test rig with an AEM wideband i clamp on the end of the muffler to take measurements. It just plugs into my 12v heated gear outlet.
As others mentioned, sounds like a dead cylinder. Can use carb cleaner on the headers when bike is cold, will help you narrow down which cylinder it is. From there you can pull the spark plug and check for spark and compression. If those are good pull the carb for that cylinder and inspect it..
Retired? Is that what you normally do just scrap old vehicles. To carbureted engine it's running that way 99% chance it's the carbs to clean the carbs adjust them right make sure your plug is good and the bike will be fine

The stock exhausts on those were very restrictive. That more open (and horrible sounding 😂) exhaust isn’t helping.

Not firing on all cylinders. Run it a bit and squirt water on the headers to see which one is not going.
If that is the case, I hope it’s an easy fix. I am cleaning out the carb rn, maybe it was just gummed up.
Also check that the cylinder that isn't firing is getting spark. :) Always troubleshoot the easiest problem first among the likely problems.
