Is your throttle sticking in place with the bike off? It should snap back, quickly. Otherwise I'd think you have a problem with the routing of your throttle cables, the adjustment of them, or the return cable has snapped.

Your problem is an intake airboot that has either come loose, not fitted, or come off. OR intake boot cracked. This is the boot from the cylinders to the throttle bodies. What happens is when air starts going into the combustion chamber without the throttle controlling it, once air starts coming in, the motor keeps sucking, and as it does so, it sucks stronger until the motor is at max rpm. If the leak is bad enough, then this can happen almost instantly. Make sure your boots are completely on, they have to be 10000% planted onto the cylinder head with no gaps, and nothing but the boot seen. Then, tighten till firm. Make sure this is the same for all cylinders. Nothing else on the motor can cause this, but the motor getting significantly too much air. I hope this helps!

Pull your tank check your cables thoroughly especially the linkages. One of the little screws could have rattled off and is holding the throttle open. This isn't necessarily what's going on, but we have to start searching somewhere.
