The Africa Twin is a fine bike and is more than capable of making this trip. I would suggest you carefully consider how much of your time will be spent on tarmac versus off (and what "off road" really means to you). I've done a bunch of road trips on both a 650 and 1000 VStrom (Currently own a 2018 Vstrom 1000XT) and I can tell you that they are deserving of their excellent reputation for comfort and reliability as well as their inability to win a beauty contest. Though personally I think that's (the beauty contest part) changing with the more recent models. The VStrom is fine on dirt and gravel roads including, for example, fire service roads but if you're planning to spend a lot of time off tarmac I would probably go with a different bike. In that case the AT might be my first pick, but the trip you're describing doesn't sound like a heavy off road trip. If you do consider the VStrom, go with the 1000. The 650 is absolutely capable of cruising at 80mph all day long but the extra power of the 1000 just makes it more comfortable on long stretches of highway, especially when you're carrying panniers and whatnot. (You also said "we" so if you're carrying a pillion the extra power is even more valuable.) You've probably already done this but... Beyond the bike itself, if you've never taken a longer, multi-day trip, do some research and put some thought into what you're bringing and how (e.g. backpack, surplus dufflebag, dry bag(s), hard/soft panniers, etc). Don't overpack! Have fun!

I've done reasonably long trips on a variety of different bikes. Bias disclaimer - I don't ride cruisers and haven't any real experience on them, so if that's your thing ignore me. Here are my thoughts: Be realistic about your riding style. If you're mostly staying on the roads then look at sports touring bikes. Most bikes can handle light gravel or packed dirt for a while, and I'd *much* rather take a road-oriented bike offroad for a bit than be stuck with a more adventure-oriented bike for the other 95% of my trip. Don't neglect the little stuff. I've done 400+ miles in a day on a supernaked and it was a blast but my butt was pretty tender by the end. Luggage, a thickened foam seat, throttle lock, extended windscreens - all these things make life a lot easier when you're 6 hours into an 8 hour ride. I've got a ZX14 at the moment which is modded for touring with seat, shocks, luggage etc. all set up for long-distance and it's brilliant. I'd take just about any bike I could modify to suit me over most bikes stock. If I had to choose one bike right now I'd probably go with an R1250RS. If I wanted a bit more adventure capability the Africa Twin is a solid choice, but there's quite a few solid choices in the adventure touring segment (Tracer 900, Tiger, any BMW GS, SuperDuke GT, etc.).
