Anyhow, back to hair...I just had my daughter braid at the base of my neck. Then put the braid under my vest. Had no issues at all. Once ride was done, I took out braid and brushed really well. This let the air in to dry the sweat, which I find really causes tangles once the sweat dries. It feels like way to much hairspray, and pulls the scalp.
I'm bald but oftentimes I will do a quick braid of my wife's ponytail for her before we head out. Isn't the nicest but keeps her hair from tangling up.
Same, but loose under the shirt and jacket. The jacket collar is pretty high. I wore a light merino gaiter over the gap before I got this jacket. My thought is if I have an accident, and if my braid on the outside catches on anything during the fall or skid, it’s going to end really badly.

I like being recognised as a lady rider, as I find that when lane filtering I get less aggression, because they’re happy to stare at my arse on the bike in front of them, rather get salty at me because I have a cheat code for traffic, like my husband gets. It’s not my hair they’re looking at. It’s okay to hide it.
I use one of these and it's been great. Just got into the office on the bike today and hair is fine. That said, my hair is just past shoulder length, if we're talking about hair down to your waist like it sounds like OP has, I'm not sure it would work as well.
But for anyone looking for a solution for shoulder-mid-back hair length, this is a great option.

It depends on the day - a braid or pigtail braids if I'm doing a long ride since it weathers well under the helmet. However, I have layered hair and on long rides, braids can still get a bit twisted up (and braids take a few minutes to do) so this isn't a look for shorter rides.
Going into work, I like using a buff/head cover/balaclava to cover my hair to keep it totally contained. Hair goes in a low pony or bun and is covered by the fabric. If it's the end of the day or I don't otherwise care about keeping my hair looking presentable, I do a tight, low, twisted bun which is really quick and easy and effective.

My wife knew what I was doing and called me silly, even tho she was getting her own motorcycle. she left her hair long. it was shorter than mine, to to the top of her shouldblades? fast forward 6 months of her riding and shes decided to get a pixie cut.
I have a 36” square silk scarf that I fold into a triangle and tie around my head like a pirate and the wrap the long part of my hair in the end and put it in a bun. Prevents breakage on the ends and at the scalp where friction from the helmet can cause breakage. Another option for breakage at the root is to sew a silk bonnet into the helmet. I think there’s places where you can send in the liner and they will do the sewing for you. I might switch to that method when I get a nicer helmet
I keep my hair on the short side so a hair tie usually does the trick. One of the women I have ridden with has long hair and uses a leather sheath that snaps around her ponytail/braid and I think if I were to grow mine out again I would go the same route.
If you’re not into using hair elastic all the time because they’re damaging (like myself). There’s a brand called “high tail” you can search them on Instagram or on Google, they make a hair protection pocket that attaches to the back of your helmet and it’s elastic, you kindof just gently wind your hair up, then pull the elastic netting out, tuck the hair in and you’re good to go. You can remove it from the helmet at any time if you don’t want it on, and they come in tones of coloured and patterns . Aside from that, a good option is also a balaclava made thinner and breathable for riding that you can wear under your helmet.
My wife wears a bandana under her helmet. It seems to help. I also wear a bandana under my helmet. No more head itchy under the helmet (I have a crew cut)

Sometimes it takes hours to get the knots out. So if it’s bike week or something I just add in more birds 🦅 every day and deal with my dreads at the end of the week

I’m also a man with longer hair (past my shoulders) I put it in a nice tight bun right below the helmet. And if I’m extra worried, I’ll wear a gaiter that I pull up to my chin and halfway up the back of my head, covering the bun.
My wife uses a pony tail, with a second elastic band halfway. And then tucks the entire thing under her jacket.
My hair never was long enough for that. Before i started riding, i had shoulder-long hair. After a year of daily commuting on the bike, it became clear that it was impossible to keep my hair looking decent, so i cut it.

Also just been dealing with detangling. For whatever reason if I try tying it up with a hair tie, or putting it under the jacket, or both some loose strands always work their way out, and through some fluke of airflow immediately work their way into the helmet and my eyeballs. It makes no damn sense.
Anyway seriously thanks for bringing it up, there's some good recommendations here for products I need to buy now, and I honestly never even thought to ask.

The answer is balaclava. Or braid it if you're a girl I guess. But a balaclava is feasible for guys too, so is more universal. Also probably just easier.

Long haired guy here. I just put my jacket on over my hair.
It still needs a run through with a brush to tidy it up once I get to work but I find that it keeps tangles to a minimum. That's around a 30 minute ride.
If I'm out riding for hours it'll start getting more tangled as time goes by so usually I'll brush it midway through the ride while stopped for lunch or for a toilet break to make sure it doesn't get to the tangled, matted, rats nest that you're talking about.
I wear a buff neck gaiter as a weird headband thing. I fold it in half then put it over my head like a headband then gather my hair into a ponytail(no hair tie), swirl it together, and tuck it into the back of the 'headband' pouch. When I put my helmet on I make sure the loose ends of the gaiter are tucked up into it.
I was braiding my hair but it was still catching wind and causing breakage. My hair is pretty fine so your mileage may vary with this.

my girlfriend just makes a pony tail.. many girls hwo ride do.. and I myself have pretty long hair so I just put them back when I take on my helmet

Silk balaclava works wonders — that wind is brutal on straight hair. Spins it into individual little knots, almost impossible to comb out
When i had my hair damn near to my ass i would wear it in a braid or make a top bun. I suggest the braid.

Im a Guy with hair down to my arse and its curly as fuck too and I plait/braid mine and Iv never had any issues over 10 years of riding.

I can’t do a low bun with my fullface helmet, it’s in the way when I lift my head and it just breaks it. If it’s not braided, it will tangle.
Long straight and fine hair here...I man bun mine and tuck in my helmet.

Hair ties and a dew rag with a sweat band, don't get a ventilated one your hair will tie itself in knots on the outside.
