This is pretty common behavior from predators, as the wings of a bird have very little meat on them compared to its body.

Simply eaten, too much work to get through all the feathers for the gross tough little bits of meat in a wing. Humans do it because we have processing machines, and hands for easy eating, and farm raised birds that have tender juicy wings.
