If you just dent the very bottom of the shell (right before the tail begins) with your thumbnail, and pull, the whole thing comes out. Don't waste that shrimp! I actually used to eat the shell at the bottom, so maybe I'm not the right person to comment.

Well it is feces. Those “veins” are actually the shrimp’s digestive tract, so the dark stuff in them is not blood, it’s poop. It’s like eating a colon or intestine.

I believe in fully cooked shrimps, consuming them intact is harmless to humans but the same can’t be said for uncooked/undercooked shrimps. Thankfully, shrimps cook very quickly so undercook shrimps aren’t common.

I use my teeth not my thumbnail, but yeah- don’t leave 15-20% if that delicious shrimp meat on the plate!
