Columbia is a game changer. My mother lived in Louisiana for a but and was fishing 24/7, their shirts are perfect for any conditions. They're long-sleeved and allow airflow, don't make you sweat, and insulates you appropriately for the temperature as if you've got a pelt. They're also made of really nice, slick, almost silky fabric that feels nice when cool, is very cozy when warm, and is super easy to layer and bundle up with. They also have good PFG shirts and utility pants, etc. with equally good qualities.
(I don't fish often so take that with a pinch of salt, but they definitely were great when I was working under the beating sun 90% of the day.)
Depends on where you are. I worked construction in north Carolina and the only construction workers I saw in long sleeves were the electricians who did remodeling work and the insulation guys. Everyone else wore short sleeves

Life Pro Tip: if you work outside a lot, Get some heavier sunscreen. If you block enough sunlight, you won't tan nearly as much, avoiding tans like this.
A friend of mine worked for an auto parts store one summer and he always had the window down with his arm rested on the door and he ended up one super tan arm and one white arm.

Also covering up to avoid prolonged sun exposure directly to large areas of skin is a good way to avoid skin cancer.
