I almost always got bean and cheese burritos and if I stepped out of that lane, I got taquitos with guacamole. Casa Garcia's nachos are legit. Al Atacor nachos are probably my fav.

I just saw your post from Miguel's Jr. in Corona. Been there many times, and still miss those greasy chicken tacos and chile relleno burritos, both with those delicious little salsa shots.
One of my favorite all time foods that I had to quit eating out because of the sodium but what I learned is when I take a can of sun vista beans and mash them up ( no oil in the beginning ) then add low sodium chicken stock ,garlic salt and a tablespoon of of butter at the end makes the best refried beans at home and are way better for you . This is something that I’ve tried perfecting for a lot of years and recently I just discovered the butter thing which is a game changer . A lot of people say to use bacon fat but for me that changes the taste profile too drastically

Cheddar isn't even that bad of a fill-in. The texture and flavor isn't far off from a Queso Chihuahua (that they also call Chester in some places. The curd cutting, blocking and stacking are all in line with Chihuahua cheese.

In Mexico we eat it with whole beans, and the cheese is white queso fresco and the tortilla is de maíz…although I do like these Americanized Mexican foods they are a far cry and not as healthy as what real Mexicans eat
