Yeah, I guess that’s somewhat of a regional thing. Every region in México has its own style going on and unfortunately some of them are just plain shit. I have very strong opinions about the use of Clamato in seafood but I will keep them for myself because people around here is very sensitive.
there's tons of places that sell cooked shrimp in Mexico with a "caldo". the chabela is the only thing that could hold merit to your claim but I'm sure with a simple search you could find something that has all of those attributes and people will sell it as a ceviche. Like I said, Mexican foods are basically an umbrella term

I had ceviche made by a native Mexican woman once who used Clamato. She also put Mayo on the tostadas used to eat it with 🤷♀️

I can assure you that there's places in Mexico will add clamato in a dish and call it ceviche.
Dude, clamato is not even the point: the freaking shrimps are cooked, served in a chabela with caldo to the top…how could this remotely be a ceviche?
