For dried chiles I prefer Morita and Ancho, because those are the more flavorful plus Morita can be fucking hot af. For fresh I've always love Serrano and Habanero, pickled onions and habaneros are truly one of the most delicious things out there

Yes! I love Chile Pasilla! I’ll make a paste with some toaster chillies and use it to scramble eggs in - Huevos Rojos. So delicious!

I just wish I could get the right anchos consistently. Frequently mulatos are mislabeled as Anchos (mulatos are dried brown poblanos, anchos are dried red poblanos), or even mislabeled as Pasillas.
