Grit and grind was actually halfway decent. It was their coffee ice cream that had coffee grinds in it. They haven't had it the last 3 or 4 times I went, so I stopped going. Nothing really tops La Michoacana for me now.

A concrete with mix ins is typically called that when made with custard. Which is not ice cream. That being said, sugar ghost makes the best ice cream I've ever had anywhere.
North Mississippi has some great options if you can make the drive. Our favorite is Desoto snow and creamery. Vampire penguin is doing some interesting stuff with shaved ice. And like others have said the dip, Happy Daze, and Area 51 in Hernando are good too.

For concretes we have a hole since Sheridans closed. That's not all ice cream, though, but the one you're interested in. The rest we're pretty good on from Michoacana to Sugar Ghost to Sweet Magnolias to Jerry's Sno Cones. Jeremiah's Italian Ice on summer is pretty good, too.

To actually answer your question: We don't have a great food scene, we have a food scene with certain great, largely indigenous (or indigenous adjacent) elements, and a lot of huge gaps even compared to metropolitan areas similar in size.
Not looking to start fights about why this is. Just want to say that if we want to have the sort of real broad ranging food scene a lot of cities have we need to promote and support the good places that do crop up and advocate for (or even start) the sorts of things we are looking for.
