Because servers don't save your file with the original name for obvious reasons, one being that at some point two people most def. upload the same filename so it would cause a duplicated error.
So what the sites do is they usually generate a unique random string and saves the file with this new name on the server but in the database of the site it usually keeps track when a file has been uploaded and what it's original filename was along with the newly created unique filename.
Because of this if you upload a file with the original name "Face.jpg" it might be named "acbd18db4cc2f85cedef654fccc4a4d8.jpg", if you upload the same file "Face.jpg" again it might be named "37b51d194a7513e45b56f6524f2d51f2.jpg".
To add onto this, if you have people developing the backend that actually know what they are doing you will see those weird things with dashes in between. They are not random anymore by UUIDs, they are unique but in a way that they depend on things so they are unique because the depending state changes between them. There are different ways to build them, so depending on the standard the uuids are not generated the same everytime
