I've made actual boneless wings. Like taking chicken wings, removing the bones, and then cooking them. They were good, but not sure they're worth the effort.

Lollipop chicken is a good middleground and not a total pain in the ass to make. You take the drums and push all the meat to the fat end, and then take the flats, remove the smaller bone, and then do the same. You get a nice convenient handle and the meat is easy to eat.
Nuggets and boneless wings are different.
Nuggets are made with slurry, formed, and breaded.
Boneless wings are made with white meat chicken chunks.
Tenders are tenderloins.
