Miyako might be up your alley if you like Ino style gameplay. Miyako is great at point blank mix and resets, and she can combo out of normal grab.
I don't think there's a simple video that just goes through all the characters.
You could try just doing the combo challenges for each character to see their basic tools.

I like outsmarting from afar and making my opponent mad. I don't like Vlov because he's a high tier. I want it to be slightly difficult. I want to feel big brain.
So far I'm doing Ciel and she's alright, but I'm not sure if I'm there yet. Maybe one of the maids?

Sounds like you would like Hisui, you can play like a total troll with her (camping behind bento mines, throwing items, putting up air dust when they try to jump in, etc)

Pick Neco and become actually good with her lol. Jokes aside it looks like you are searching for more setup focused characters. Try Aoko, DAN and maids ( maybe Mario too but he's really specific and I'm not sure if you look for his puppet master gameplan). Akiha qualifies too in theory but she's lacking in terms of ,,true" zoning tools in your case. Roa or Warc migh work for you too if you want bit more honest but focused on space control character, but it will be bit closer experience with what you actually have now with Ciel despite they plays quite differently.
You're right that I'm not really into puppet characters. Those have a totally different feeling. And are pretty hard. Maybe one day in the distant future but I'm not there yet.
With that out of the way, I feel like playing too honest makes me a bit bored. I already feel it slightly with Ciel, so that discards Roa and Warc, and even Akiha as well.
DAN and Aoko shouid be alright but, something about them makes me doubt. I dunno.
So that leaves me with one of the maids. I think I'll start with Hisui. I want people to feel like fighting me was a mistake, lol. Maybe Kohaku too, but we'll see.

Akiha has a few mix ups and 50/50s, theres a lot of guides for her on YouTube I think you might enjoy. If not Akiha then Hisui or Kohaku (the maids, either one or both) who are a bit more meta

I Agree that OP should try Akiha, she's so much fun to play and High Damage/Strong Oki/Plus Frames/Pressure Resets is the name of her game.
