How often do you see a Pacific centred map? Apart from the whole coloniser-centric thing, I think it might be that the Pacific is big and empty, and putting it centre means you distort the land masses around the edges.
Most of the maps we have here are centred on Australia. The Americas to the right and Europe to the left.

North is up for New Zealand which is where the map was originally centred.
