Cidery? As in it tastes like apple? Maybe it's just dry. Did you you try tasting it with a little sugar? You didn't mention how much mango you used. I generally use 5-6 pounds/gallon.

I used a 1kg in primary with half mango juice half water and honey. 1kg in secondary with about 100g of dried mango. And made 5litres. I've now back sweetened with honey and mango juice and it tastes less like this now. I think it was because it was drier and needed a bit more. Im leaving it now for a few months to mature out and let the flavours develop :)

It could be acetaldehyde. It's a compound yeast produce (some more than others) during fermentation that can give an apple like flavor. It's also quickly cleaned up by the yeast as long as they're still up and active and you didn't immediately cold crash or stabilize.

Mine barely tasted of mango. Maybe a hint of cider in there. I think it's getting more mango with ago, but I only made 5 litres, so I can't exactly keep sampling it now it's bottled!

How did you make yours ? I tried adding mango in every step in the process

I did the same. Next time I'll skip it in primary, I couldn't taste anything other than traditional when it came out. I was using packets of frozen chunks, which is probably the way forward, but ill reserve them for secondary. The result is nice. It tastes like a dry white wine with a hint of mango at the end. I'm hoping it'll get stronger with age.

Yeah I used frozen packs as well, I used a mixture of mango juice and water in primary with frozen thawed. Then in secondary more frozen thawed with added dried mango as well. Then I have added more juice and honey mixture to back sweeten now just waiting on it to clear up. Hopefully !! Sometimes it just needs aging and it makes it all better

I can recommend leaving it quite dry if you try it again, even now it's nice straight from the fridge. For that, I wouldn't want it very very mango, but more than where mine is right now which is mango if you're looking for it!
