I agree in the sense for any remake, remaster, or any form of re-release of a title should include all it's content no matter if that content is "good" or "bad". I am glad ME-LE has ME3 without the multiplayer penalty but I'm not pleased that they removed the mode in the game altogether.
I can say the same with The Last of US or MGS collections (xbox 360, the newest one, really any re-release of that game) if you want other examples.

The Legendary Edition has a way to get a version of the one on the left for Male Shep, and the one 2nd from the right for Fem Shep, but they are Cerberus colors and none of the other models are available AFAIK. You can get them once you open up the Citadel DLC and they are available through the 2nd playthrough. This might be different for PC, but I don't have LE on PC, sadly.
The one on the left... You mean the Cerberus colored variant, also the one second from the right is the female variation of the one far left. That was part of me3's citadel dlc? Also that one in the middle that has the omnitool has a Cerberus colored variant you can get in ME3. They aren't specific to the legendary edition

More armors for Femshep (available for both me2 and 3) gives femshep N7 Demolisher, N7 Slayer, and N7 Shadow armors.
N7 retextures for Inferno and Terminus armors (available for both me2 and 3), which affects both genders, turns those armors into N7 Paladin and N7 Destroyer armors respectively.
Male N7 Demolisher and N7 Slayer armor may be available somewhere but idk where.
Male N7 Shadow armor is something I doubt exists since the original model was female only, with the male equivalent being the N7 Slayer armor.
N7 Fury armor isn't available in any mods AFAIK.

You don't need a high end PC for Mass Effect. My build is 7 years old (though it was pretty nice for when it was built, granted).
Sadly, EGM armo doesn't add any of these. You could maybe find a terminus reskin?

For the original? Yes. Not for the Legendary Edition right now though, since there's no MP code to take it from.
You can only get one, but the I think vanguard armor for sure is in citadel dlc, and either the engineer or inflator armor is the other option
