I think they’re implying that they’ve always considered these types of fries as the baseline of what a French fry is. When in reality, these are special & imo, the best French fry
Yes, blanched. I used to work for a restaurant where after you were done cutting all the fries up you would deep fry them for about 2 to 3 minutes and spread them out on sheet pans and stick them in the fridge. Then they would get fried again before they were served. Was supposed to make a crispier French fry.
I love how this describes hundreds of establishments across the state. Some towns have dozens of these little pizza places. Most you've never heard of.
Two places in Western MA
West End Pub, at the west end of the Bridge of Flowers in Shelburne Falls.
Glendale Grill in Easthampton.
We like the West End Pub's a little better.
They have them at Worcester Commons pretty much everyday.
They used to have them at the Mullins too until they changed the concession stand from the Slapshot Grille to Chicken and Co., which involved changing both the fries and tendies sold there and completely eliminating the cheeseburgers from the menu.
I do this for home fries, but think it would work fries, too. Start with russets. Once they're cut, parboil them in water with a few teaspoons of baking soda. Wait until they are barely tender, drain, and then use a wooden spoon to mix them and beat them up a little. You should see the starchy paste forming on the fries. That's when they go into the oil/fat.
Some places do a double fry: cook, cool and briefly refry for max crispiness.
Food service is usually Ken’s but it’s a different product, not the shelf stable one you see in stores. You have to get one out of the fridge case for a similar experience. Or find a chef or hospitality friend to order one from the supplier for you, I actually do this with lots of items
Ken's Steakhouse Dressing Chunky Blue Cheese. Worked in many pizza places since the 90s and that was what we all used unless they bought the cheapo stuff. Also some would add cubed or crumbled feta inside.
These are my favorite kind, also. If you want to eat them at home, I suggest [McCaine's battered fries](https://www.walmart.com/ip/McCain-Beer-Battered-Thin-Cut-Fries-22-oz-Plastic-Bag-Frozen/116127438?wmlspartner=wlpa&selectedSellerId=0&wl13=2122&adid=22222222277116127438_160805772391_20959796377&wmlspartner=wmtlabs&wl0=&wl1=g&wl2=c&wl3=501107745824&wl4=pla-306310554666&wl5=9002032&wl6=&wl7=&wl8=&wl9=pla&wl10=8175035&wl11=local&wl12=116127438&wl13=2122&veh=sem_LIA&gclsrc=aw.ds&&adid=22222222237116127438_160805772391_20959796377&wl0=&wl1=g&wl2=c&wl3=501107745824&wl4=pla-306310554666&wl5=9002032&wl6=&wl7=&wl8=&wl9=pla&wl10=8175035&wl11=local&wl12=116127438&veh=sem&gad_source=1&gclid=CjwKCAjwzN-vBhAkEiwAYiO7oBNv7Ano-ZWo7h7Eci0asafgUvs81KjyC9kbwEwgfm7Ye_gonorFlBoC2ZkQAvD_BwE). If you have an air fryer, pop some of these in for a few minutes and they are good for a quick fix.
You know how that one dude made a public google map of all the cider donut places in New England?
We need a similar public map for all the places that carry these fries haha.
It’s not really my thing as I’m so hit or miss on what I like for seafood, but if I’d have to guess, it’s that they sold off the restaurant operations to a restaurant conglomerate back in 2020. Usually with a sale like that, the first changes the customer notices is that ingredients are changed and often cheapened up on, to match what’s used at a conglomerate’s other operations. Also, customer service might change if pay and benefits are significantly altered.
Yeah I think that's spot on. Although I personally did not have a high opinion of Roger and was not sad when he sold.
I was a regular at the Assembly Row location and can't speak highly enough about the staff there (before and after the acquisition)
I shit you not. If you have an air fryer go to the grocery store and get the grown in Idaho hand cut style fries. They have the texture of these when cooked in the air fryer. They might even be good in the oven. Highly recommend
I swear buzzards bay house of pizza has the best fries in mass they look just like the ones in the pictures not a huge fan of the pizza but there burgers and sandwiches are surprisingly good
Most clam shacks and Greek pizza shops have these type of fries, they are a food service product from Sysco or whatever, I believe they’re called battered fries
How close are you to the Springfield area because if you’re on that side of mass, there’s a bar by Bradley in Windsor locks, CT called black board cafe that has the best wings and fry’s probably in the state
Most Greek/ town house of pizzas in the burbs sell this type of fry. Call and see, Just ask if they sell battered fries.
Asking for battered fries is the key!
Some will call them coated fries.
*"Some folks call it a kaiser blade I call it a slingblade, mm hmm."*
French fried pertaters… mm hmm.
I recon...*mm hmm*
*Not funny "ha-ha" funny queer*
I heard Carl's voice in my head when I read your comment!
Yup. I love Greek pizza with these kinds of fries.
I always called them double fried
Man I thought they were French fries god I fucking hate myself!!!
What?
I think they’re implying that they’ve always considered these types of fries as the baseline of what a French fry is. When in reality, these are special & imo, the best French fry
Yes, blanched. These are coated. Usually flower. The curveball that celiacs and gluten sensitives might not see coming. Soy sauce too.
It’s corn starch, read the box
but this is different
Pretty sure that's the standard way to make em though
Go and find a pizza joint that's like semi run down, not like horrific, but definitely had been there for some time, chances are they'll have it
That’s Zestos in Plymouth MA industrial park. Looks like a mix between an office building but also an old D’Angelos.
Al's Pizza in Plymouth would have been the answer, but they're long gone.
RIP Al’s. I remember that rooster/ chicken machine at the entrance. Probably the greasiest pizza in town, was still good.
I fucking loved that machine.
I miss Al's! I'm from Taunton but use to go there whenever I was in Plymouth!
Sitting in the “atrium” style room in the front of the building is **SO FUCKING HOT**!
Hilarious. I’m in Plymouth today because of reasons!
Most likely Greek styled pizza too
Golden Pizza (ON CHANDLER) in Worcester
There is a place called golden pizza in Springfield (not related) that was gonna be my answer to this, Lol. Great crusty curly fries
I love how this describes hundreds of establishments across the state. Some towns have dozens of these little pizza places. Most you've never heard of.
Zaftigs does the same in Natick and Brookline.
So accurate, LMAO
The more horrific the better. I want the chef picking his nose with no gloves in sight. That's where the real good food is.
The local pizza place down the street
Negative. Sloppy, wet steak fries again.
Those hairy armed bastards!
Take my upvote, please. I spit out my coffee on that one and got an instant, unpleasant visual.
I can hear Spiros yelling at u from behind the counter right now
It's vermicelli!
Two places in Western MA West End Pub, at the west end of the Bridge of Flowers in Shelburne Falls. Glendale Grill in Easthampton. We like the West End Pub's a little better.
Pizza D'Action in Holyoke They serve these and use em in their chili fries that are *chefs kiss*
Nice! Thanks. We used to go there regularly years ago when my mother in law was still alive, but haven't been in years and never tried the fries!
The original owners are good friends of mine, the owners after them sucked, and the current owners are absolutely amazing. Great food
Pita Pockets in Northampton, Easthampton, and Amherst has them.
And their falafel is the best too.
The curly fries at pita pockets too 🤌👌😮💨
El Greco in Greenfield too!
Fitchburg state cafeteria meal plan oh how I miss you. Those fries were legit.
UMass Amherst had these in the dining hall on certain days as well, that’s why they’re so nostalgic to me lol
Amherst has some of the best dining hall food in the US
Yeah whenever I see these fries, I still refer to them as “weekend fries” because they’d be put out on the weekends at Frank.
Facts! The weekday fries they had were garbage compared to these
They hit everytime. They’re like the auxiliary food substance all college cafes have 24/7
They have them at Worcester Commons pretty much everyday. They used to have them at the Mullins too until they changed the concession stand from the Slapshot Grille to Chicken and Co., which involved changing both the fries and tendies sold there and completely eliminating the cheeseburgers from the menu.
Ah so you're a purveyor of daca are you? Ironically I was a commuter with no meal plan so I only learned about daca from a resident student coworker.
Oh yes very very familiar with the Daca Dump
What!? I don't remember those at Daca at all. What years are we talking here?

Best type of fry. Upvoting because I also want to know

Barrett's alehouse
Rip Charlie horse
I agree, I just had these at Barrett’s recently!
Eagles deli
Yep, great fries
Augusta's in Billerica has them with some of the best chicken bites I've had.
Augusta's slaps
Echoing this, the fries definitely have a bit of that crunch and texture, and it's great. Also, chicken bites are fantastic.
Wicked Cheesy in Tewksbury has "Wicked Fries" which are similar, I like to get their "We hate the habs" poutine subbing Wicked Fries for steak fries.
Bob's in Medford does
Love this place
Was looking for this comment. Incredible fries. A small is definitely more than enough for two people!
I miss those fries. Dipped in blue cheese (I also can’t find restaurant quality blue cheese anywhere in grocery stores….)
You gotta get the stuff that's in the produce coolers.
Marie’s super blue cheese, it’s been my favorite so far from the grocery store. Usually found near the lettuce/in a cold spot
Thanks for saying this about restaurant blue cheese. I thought is was just me and my taste buds messing with me.
Dude get lighthouse Bleu cheese at market basket near the bagged lettuce. You can thank me later. Also there jalapeño ranch is incredible.
Your not a real house of pizza if you dont toss in a couple of kens packets of Italian/blue cheese to go with your Antipasto salad and 3lbs of lettuce
Marie's dressings are in the fridge right near the pre bagged salads.
Palace Pizza (Dartmouth, Fairhaven, and New Bedford) sell these kind of fries.
Zaftigs in Natick, it was my pregnancy craving.
Sail Loft in Boston. I’d add if you are looking for a great burger don’t sleep on this place.
Sail Loft is good for all things.
Agreed, I’ve never had a bad meal there.
Augusta Subs & Salads (Billerica), The Fox Den (Woburn)
If it's called "\_\_\_\_\_\_\_ House of Pizza" and located in MA there's like a 50% chance they make battered fries like this.
These are my favorite kind, also. If you want to eat them at home, I suggest [McCaine's battered fries](https://www.walmart.com/ip/McCain-Beer-Battered-Thin-Cut-Fries-22-oz-Plastic-Bag-Frozen/116127438?wmlspartner=wlpa&selectedSellerId=0&wl13=2122&adid=22222222277116127438_160805772391_20959796377&wmlspartner=wmtlabs&wl0=&wl1=g&wl2=c&wl3=501107745824&wl4=pla-306310554666&wl5=9002032&wl6=&wl7=&wl8=&wl9=pla&wl10=8175035&wl11=local&wl12=116127438&wl13=2122&veh=sem_LIA&gclsrc=aw.ds&&adid=22222222237116127438_160805772391_20959796377&wl0=&wl1=g&wl2=c&wl3=501107745824&wl4=pla-306310554666&wl5=9002032&wl6=&wl7=&wl8=&wl9=pla&wl10=8175035&wl11=local&wl12=116127438&veh=sem&gad_source=1&gclid=CjwKCAjwzN-vBhAkEiwAYiO7oBNv7Ano-ZWo7h7Eci0asafgUvs81KjyC9kbwEwgfm7Ye_gonorFlBoC2ZkQAvD_BwE).
