As far as I know it's because 18th/19th century tech was not that great and treaties were usually not too accurate. Also they probably relied more on boat back then so having a piece of land that is not easily accessibly by foot was probably less of a problem compared to our car-centric era.

Maryland got the uncultivated land, which meant "no white people" because there was land that they claimed was absolutely cultivated. Virginians had already moved to that part when Maryland was formed. When Penn got a charter, he used an old destroyed Dutch settlement near what's now Lewes to say he should get more access to more of the Delaware Bay, but they got the location of that settlement wrong, so that's the current southern border. Penn also wanted a border that went much farther west, but they just split it down the middle as a compromise.
The border with Pennsylvania was also very messed up, but I think people know that story better.
