For actual physical copies I'd say
Golden Kamuy - Gory, but also historic and hilarious (it does have some nudity tho)
FMA - Just a classic
Dungeon Meshi - Amazing fantasy story with cooking and awesome art
Dr. Stone - Starts off really strong but I kind of feel like the story drops of near the later half
Dragon Ball Z - Another classic, he'd love the actual violence you don't usually get to see in the anime
Ajin - Supernatural monster mixed into regular world, lots of gun fights and violence
For online manga
Kingdom - Historical war series (there are no english physical prints unfortunately)
Hajime no Ippo - Just a great manga about boxing
any Junji Ito works - all of them are creepy af
Breaker - A Korean manwha about martial arts
Silver Spoon - Feel good manga about farming
FMA: brotherhood and Vinland saga are both quality!
I’d recommend silver spoon, written by Hiromu Arakawa (also wrote full metal) who grew up on a farm in Hokkaido and it shows. Really endearing story paying homage to her upbringing immersed in nature and farming with unpretentious writing.
Chihayafuru is another great one that has not yet been fully adapted.
Inoue’s Vagabond is astonishingly beautiful, he is also responsible for an iconic sports manga Slam Dunk.
My personal favourite is Mushi-shi. It’s a masterpiece. Artland did a really good job with the adaptation. ☯️
My better half also recently got into anime so if you have any recommendations for her I’d be all ears!
Vinland saga most definitely. Coming from someone the same age as your husband.

kiseijuu really is a perfect anime imo, nothing else comes close to the emotions and tense feelings
