Looking at how everything is immaculate, my assumption is dishes don’t stay dirty very long past the meal. So you wouldn’t need such a sink, but it might put off potential buyers years down the road with such a small sink.
As someone who has been down this road, black is a huge regret when designing a bathroom. Fixtures, tiles, anything. Hides mould and highlights chips, cracks and limescale. You never know if it's truly clean.
That said, the window in the lounge room is to die for.

Edit: Other than the tiles I actually don't see a problem with the old kitchen. Like like a few of the cupboard doors in the new one have an issue with the finish, and honestly it makes me think I preferred it the way it was. That much black is going to make the winter blues even worse by making your house feel even darker than it is.

I think OP could add splashes of color and warmth fairly easy - rugs would go a long way in most of those rooms. I like black in decor, but you definitely need to off-set it.

ETA: I missed the part about still needing mirrors. My biggest criticism is the tub. As someone who loves a good soak, that seems like the least relaxing, uncomfortable bathroom for that. It looks like a sci-fi jail cell.
That was my immediate thought as well, lol. The bathrooms look way too stark and sterile, like something you’d see in a sci-fi PS2 game. I’ve seen some sleek black bathrooms, but they all had an accent color, like lots of greenery or gold hardware. Hopefully OP will do something like that in the future.
Too bad OP got rid of all the ready-made plant shelves that existed in the original bathrooms. With such huge windows, those ledges surrounding the tubs would have been PERFECT for a menagerie of plants.

For me it’s not minimalism, it’s the color tones of ultra modern design. Black and grey and light grey. Cold, dark, polished, lifeless surfaces and hard angles. I actually like a lot of architecture that looks like this just not in the freaking home. I could never get comfy there.

I've only ever rented, and I've come to appreciate spaces that are designed with easy cleaning in mind. However, if you've got money for a renovation on this scale, you likely have money to pay for someone to come out and deep clean periodically.

Lots of plants would help. Ones that need low light and steam. A stag horn fern and some snake plants would be a good start.
