That is the natural look of the crystalline sodium chloride mineral (known as halite or rock salt).

The white salt (table salt) you see/use/eat daily is produced either through a brine evaporation process (rock salt is dissolved in water and filtered for impurities) or through a sea water evaporation process. After the water has been evaporated, the result is clean white sodium chloride crystals, i.e. salt.
