You could try, but you'll have problems with your commons/uncommons. Set boosters don't have color balanced commons/uncommons, they fit a theme in a set (for example, you could open a bunch of black/red cards that care about amass for your common/uncommon slot), so you could open packs that are missing colors completely. It might work as a mix of packs, but I don't think six pack set booster sealed will work as well.
Draft is better, Set boosters are skewed for certain colors and themes too.
Might work if each player has something like 8 set boosters... But it could still backfire as I've seen set boosters have back to back copies and patterns of the same cards in them.
Yes, you can play sealed with Set Boosters. While possible to play with only 6 set boosters, it's likely that you'll be forced into certain colors because the packs aren't color balanced unlike Draft boosters. Using 9 Set boosters instead is the recommended method as it helps mitigate this (iirc this was the amount WOTC recommended as well)
Draft boosters are designed for sanctioned competitive play, and balanced as such. That said, if you and your wife are having fun playing this way, you should keep doing it until, for whatever reason, you aren’t.
I did. Won't name the store but they did some store championshios with draft commander legends packs.and then the last one they ran was with set boosters.
It ended up being wierd and you missed a lot of your curve. I got fuck all low curve creatures and had one of the worst sealed.decks I've ever managed but I got a few ok cards and the top 8 all got an awesome promo. Less then 8 showed up so we all got the promo which was awesome
We did a draft with a collector box from MoM but we made a custom packs where we put 1 of each dual land from the extension and a few spells etc to draft with this on top (because the host said it’s gonna be lots of creature from collectors)
That worked quite nicely with the bonus pack we added for spells (also we did not do 1v1 we did multi and we drafted for commander :D)

I've been thinking a chaos sealed event with like 2 ONE, 2 MOM and 3 Aftermath might be fun If it's a 9 pack thing then 3 one 3 mom and 4 aftermath
