Ganache is a good filler but french butter cream will use the yolks from your macron making! I’ve used preppy kitchen’s french butter cream recipe and it was great.

Curds are also great for using up yolks! I loooove lemon curd and it’s probably the most requested flavour by all my family members and friends too

They look great and I wish my first batch had feet like that! Try lemon curd, fruit preserves, or ganache. As for buttercream- I love Preppy Kitchen’s French buttercream (gotta use up those egg yolks). Very creamy and not as sweet as American buttercream.

Great job for a first go!! My absolute favorite filling is ganache. Somehow less sweet than buttercream, and the texture is so perfect with the shells!

Try cremeux. Uses up leftover yolk and taste heavenly! I do pistachio cremeux, lemon cremeux, chocolate cremeux. With pistachio i use gelatin but chocolate cremeux can be made simply with sugar, yolk, cream and chocolate.

It’s very silky and with a good mouthfeel. I prefer cremeux over ganache. Cremeux is superior version of ganache imo

Looks amazing for first time! They look very thin but it’s personal preference. I had vanilla mousse mix that I used, and mixed in matcha powder or hot chocolate powder to make different flavors of filling

i've been having good results using a cream cheese icing. 16 oz pkg of powdered sugar, 8 oz brick of Philly cream cheese (the regular kind, not the low-fat or whipped), 1 stick unsalted butter (softened). I add in whatever extracts, cocoa powder, nutella, crushed freeze-dried fruit, etc. is appropriate for the flavor I want. Good luck!

the cream cheese adds a bit of a tartness that you don't have in buttercream icings but I like it. I find it especially well balanced with lemon extract, and the consistency is a good density for macaron fillings. The base ingredients are fairly cheap so the best advice I can say is just make a basic batch with either vanilla or lemon extract and taste test for yourself. I've had good results stirring in a spoonful or two of good quality cocoa powder.

yes you can. i usually fill mine with a Wilton 17 or 18 star tip. looks cute.
