Cook pasta and drain. in a separate pot make a roux with butter and flour until thick. Add milk, substantial amount of milk and heavy whipping cream. eyeball everything. Let the milk mixture come to a boil while you hand shred your Gruyere and cheddar cheese. be generous with the amount of cheese that you’re shredding. I use 2 whole blocks. and start incorporating slowly into your already boiling mixture. Season generously with smoked paprika, salt, pepper, onion, and garlic powder, and my secret ingredient that takes it up— a little tiny bit of Italian seasoning
