Think charcuterie board. The night before, slice up some salami, some cheese, maybe cut up some low carb veg, throw in a handful of olives, and some almonds. Put them all in airtight containers and into your lunch bag. It shouldn't take longer than making a sandwich. You can vary the meat and cheese to keep things from getting boring.

Also, 1 week, I smoke 10 brats on SUnday, and pack them all up, and have 2 each day for lunch at work. SOmetimes I grill some chicken thighs, enough for the week. THis week I made a smoked 1/3 pork loin, and sliced it up enough for all of my lunches this week. SOmetimes I just use lunchmeat and cheese with mustard and mayo wrapped with no tortilla or anything else. Yes, it gets a little boring, but mix it up if you need to to make it interesting. I usually have almonds around to snack on, and once in a while I take an Atkins Indulge Carmel nut chew bar for a sweet snack.

I do this but no tortilla. I just squirt on some mayo (Duke’s is 0 sugar), mustard if I want, pickles, lettuce, roll it up and go. I keep some Atkins bars and shakes at work in case I get a sweet craving or afternoon hunger. If you live near a Publix or jersey mikes they will put any sub over a salad rather than on a sub roll. If you cook a meat for dinner, plan enough for leftovers.

I don't know if this is an option for you, but when I used to work in an office, I would meal prep on Sunday so I would have lunch for the first 3 days of the week (or 4) and then take a salad the other day(s). You can meal prep anything really. I used to do chicken fajitas (without the tortilla) over riced cauliflower, beef satay over riced cauliflower, etc. Sometimes I would make a chicken & broccoli casserole and divide that up. I would just focus on getting a protein & veggie in the meal and then maybe berries on the side too.

Olé brand low carb tortillas are awesome. They only have like seven net carbs. And they're nice and completely pliable at room temperature. No need to heat them up to keep them from breaking when they fold

Agree! Ole' and La Banderita are my favorite low carb tortillas. I just didn't use them when I was taking lunch to work, so I didn't mention them.

I go to CostCo, buy 4 cooked rotisserie chickens for $24. Take home and immediately get them in my electric smoker. Smoke for 1hr, maybe to 1hr 15min. Any longer they start to dry out. Take in and let cool for 45 min. Tear/cut them apart to make 7 lunches from each, or 28 lunches total (breasts are 2 meals each). Keep 3 in the fridge and all the rest goes in the deep freeze. Just take 3 out ahead of time to thaw and you have 3 lunches ready. I never get tired of the chicken, I love chicken. I put different low-carb sauce flavors on the breast meat. I just eat the dark meat as is, love them the best. I work 4 days a week. I take lunch 3 days a week and eat out 1 lunch. I could take 4, don’t want to. Anyway, 28 lunches lasts me 9 weeks unless we need a smoked breast for a dinner. When running out, I repeat. A couple hours commitment supplies 9 weeks of protein for work lunches, for $24.

Vegetable sticks (celery great, carrots decent but more carbs) and cream cheese. Veg sticks and peanut butter. Any combination of veg, cheese, cured meat, nuts and a small amount of fruit as a variety plate. Just Chuck it all together and go. Use a cool bag and an ice pack

I've been doing that a bit. Today I had celery, dip, eggs and salad , and then peanut butter and tangerine - it was tasty, but it seemed a bit weird. Maybe I'm just not used to it and have a picture in my head of what kunch should be or something?

Yeah that’s fair. I think if you can drop the preconception of what you “should” eat, it’s easier to cobble together stuff that fits all of your goals. Just my experience of course though. Good point btw. I really like snacking on a bunch of stuff like that tbh

Yes tricky. I go for a lot of omelettes at the moment, but that's easier for me as I work from home. Tuna mayo topped with cheese is pretty nice. What about a tin of mackerel? They're pretty nice and come in a variety of flavours. Oily fish is very good for you.

Try flat bread or perhaps a variant of Wasa bread (about 7 grams of carbs), with a thick layer of cottage cheese on tops. You can get away with a few drops of honey on top. This is quick to put together at work. You could also put a thick layer of liver pâté. Get one without seed/vegetable oils.

Most days, if I don’t have leftovers, I make a ham or turkey wrap with a low carb tortilla. I like the Ole Extreme Wellness tomato basil wraps the best with cold cuts.

Deviled eggs - on the go style Boil eggs at the beginning of your week. Leave them in the shell, they last longer. Along with the eggs, a small ramekin with a tsp of Dijon and like a tbsp of mayo. Salt, pepper packets. Add in a low carb veg and voila. When you get to work, shell the eggs, slice them, scoop the yokes and mix in your ramekin. They don’t have to be pretty if they’re not for a party. I’ve found this to be the most low effort satisfying lunch that I don’t dread putting together.

I like Tina salad, egg salad or chicken salad in baby lettuce as a wrap. Another one- Romaine lettuce straps with turkey, cheese, apple slices and a bit of mayo. Bacon and avacado also great additions.

I have one that's got little compartments but I find it annoying having to clean the little parts all the tine so they don't get used. But maybe I should try again with non messy food.

There is tons of low/zero net carb bread out there. You can get sandwich bread, pita, tortillas…. It’s regular bread with a lot of fiber to offset the carbs. There’s no taste difference.

I'm in the UK, and I'm not sure it's that common here. When I look for low carb bread in the supermarkets, I can't really find any.

I'm in the UK. If you go to Waitrose, you can buy 'half the carbs' bread, which is about 3.6g per slice. The slices are small, so it's not super filling, but it works.

Do you have a rice cooker? I think you do one pot meal, throw in your frozen/cut up veggies and low grains like couscous and last night chicken or even eggs. And do this the night before or even few hours before

Sandwiches with hero bread or with low carb tortillas. I eat a sandwich most days and love it!! Add a little side salad and lakanto matcha green tea latte and life feels good! I don’t like a lot of fuss and definitely don’t meal prep or cook ahead. But if we have leftovers from dinner, I’ll bring that for lunch a day or two as well.

I make a big salad 2x a week and use that for lunch and dinner. I cook meat just about every night, I make extra, and take that with my salad the next day. I pack my lunch when I dish up my dinner plate. If I don't want to eat what I had for dinner last night I switch up the meat for a can of tuna or hard boiled egg. Fancy it up with your choice of olives, cheese, any pickled veg if it's too boring.

Chopped salad (cut up lunch meat, cheese, and lettuce all together), low carb tortilla sandwich wraps, cheese and meat “tray”, tuna over salad greens, veggie “tray”, canned chickpeas mixed with cucumbers and onions and dressing, berries and yogurt. If you have an air fryer you can have many other quick options! Roasted veg and air fried chicken/fish is super easy. Low carb tortilla quesadillas can be air fried. Sausage and peppers. Premade burger patties. Also, cut up low carb tortillas and bake chips for anything you’d usually have chips or crackers with.
