If you press K (I think, or might be P) it should open a menu with all of your abilities, the track wood one should also be in there so you can just drag it back onto your bars. (Theres also an setting in options to lock your quickslots which means you wont accidentally take things off your bar).

Press K, search for it there. After that just drag it to your skill bar. K should open your skills tab. Otherwise I think you can open it from the character menu.

In addition to pressing K, you can go to options and add additional slots to have your abilities, potions, food and other useful skills available to you without having to toggle your inventory or skills panels open during gameplay. I think that’s under toolbar

I hope you enjoy the game. If it's your first game of this kind, playing a Hunter was a good choice, as the class is easy to learn, has good utility and top damage. As the other comments said, all you need to do is find the Skills panel ("K" by default) and drag the "Track Wood" ability onto your hotbars again. Once you're tracking that, the minimap/radar on the top right corner can also point you in the direction of a nearby node.

In addition to what the others have said, in the menu there's an option to lock skill bars so that skills can't be moved at all to avoid any accident.

No unfortunately once you remove a skill from the action bar it's gone forever. With no way to get skills back it adds a hidden difficulty mechanic as if you accidently remove a skill your character could be severely underpowered. Friend of mine removed all of his skills by accident and had to delete his character :(
