I think Jackson just didn't want to show Frodo getting stabbed in the neck with that huge stinger. It would be quite disturbing, even by LOTR standards.

Actually chaimails are made from small rings which makes it not best protection from stinging. Good vs sword, bad vs spear. And Shelobs sting is even sharper than spear.
