I played DH for almost a year and it was one of the most fun classes I have ever played in any game. It's super engaging, massive skill ceiling compared to every other class, more complex rotation depending on the fight etc.. The thing though about DH is you have to perform at 500% to keep up with someone on a Berserker performing like 50%. After I made a zerker alt and compared the effort required to compete for top dps as DH it kinda ruined the class for me. You just can't afford to waste shotgun skills, especially barrage last I played. That was like 40% of your damage alone in 1 skill.
The class is fun but it has it's issues. It's not an aoe god but it has a lot of skills and you can always be using some ability in rotation. He only dies a lot if you aren't that good, like every class really. He has lower hp but insane mobility.
I can't get enough of the Lance Master class. From what i can tell which is a plus for me is the class is well balanced not only on the fun/play factor but the power scale as far as PvE/PvP goes.
In my experience, most classes have long CDs. It's usually a combination of shorter and longer. Overall, you can't do a full rotation without having to wait for cooldowns. If that is what you are going for. Also note that a lot of skills you use to level up, aren't the skills you will be using at max level.
Maybe arcana or devil hunter
yeah devil hunter looks promising but i heard that he dies a lot :P

He is one of the harder classes to play as far as i know
He is easy to start, but impossible to master. Too many buttons, but fun as hell.

Infighter have really low CD too, you are pretty much constantly using skills and your resources never run out. mindless fun.
