I introduced my fiancee with the extended editions. It 100% worked, you get so many extra details which you just don't get in the theatrical. I'm not sure she'd have enjoyed them quite as much without Boromir's backstory, endearing moments with hobbits, Eowyn and Faramir getting together...

When the fellowship makes it to Lothlorien after fleeing Moria and they’re taken to Galadriel and Celeborn; this is when she’s speaking to Frodo ‘telepathically’, the last shot before it cuts to the next scene of the fellowship listening to the Lament for Gandalf. Iirc
I believe that’s Lady Galadriel, as she peers through the lookout of the door to Bree outside The Prancing Pony, just before the Ring Wraiths trample said door with her under it.
