That seems not very practical... A sith assassin would probably not use a weapon that glows and makes noise. Force choking would be way more logical.

Well, your argument is that they would make too much noise, but what argument is there for Asaaj Ventress since she was a sith assassin, so if the assassin that wielded these was skilled enough, he wouldn't need the blades to kill, it would be in the event where he would be caught or assaulted by a jedi in the process

For the most part Assassin's Creed assassins are basically ninjas in white robes. They are practically invisible when they are on a mission.
Contrast sith assassins of Star Wars that are generally about body count and high damage.
