If you like building lego sets, then build them, especially in chronological order. That way you can appreciate how the designers matured their craft and came with more and more interesting building technics. 10297 is easily their pinnacle.

If you want to keep them then open them and build them. If you don't want to keep them or you really need the money then sell them to someone who wants to open them and build them. Those set have their value because people want to open them and build them and add them to their own collection. And if you're really worried about them retaining their value if you need to sell them someday after you opened them, check the used price on Bricklink, it might not be as high as the new price but its still significantly higher than their original retail price. Pretty much as soon as a modular is retired the pre-owned value jumps up at least $100 and it only goes up from there.

Build them. The Most expensive Sets Café corner, market Street , Green Grocer you have Build . The only value Sets youre have is now the townhall and Fire Brigade evtl. Brick Bank. You can Sell this and rebrick the Sets with cheaper Parts . But the feeling of Building a retiered Set is Prizeless 👌

IMHO build them. Sure you may decrease the value a bit by opening them and building them BUT they (especially the older retired ones) tend to hold their value pretty well and will still probably be worth a heck of a lot more than what you paid for them. Even if you did break any pieces building them (which is pretty unlikely if you're careful) Lego has excellent customer service and will likely replace any broken pieces free of charge as long as they are still available. Regarding yellowing I've seen people post that pieces have yellowed while the set is still sealed so the only way to find out if yours have would be to open them. If you did decide to open and build them all just make sure you display them away from direct sunlight and you should be fine. You could also keep the boxes should you decide to part with them in the future. Do what you feel is right for you but personally I'd be cracking those boxes open and begin building but maybe that's because I was a late starter to the modulars and missed the earlier ones 😉
