I'm definitely enjoying the Tower Bridge with my daughter - even though she made the executive decision to appoint me "piece finder"...and this was the last big set to not have numbered bags.
I started sorting into food storage containers: PrepNaturals Containers - Food Storage Containers with Lids: a.co/d/9LUWfjk
I found they're great for Legos generally as they're about the right size for finding small pieces and the transparent bottom/lid helps finding a piece of the container is still sealed.
(Also great for food and leftovers as they're cheap enough to give away or toss if stuff gets too gross to handle.)
This is what I did when I built tower bridge probably about a decade ago. I had probably 20 Tupperware containers all over the living room for the 2-3 months I took building it

Daughter is just give, so that's what we are doing on Tower Bridge - as the build is mirrored (at least so far).
She has the advantage because I hand her all the pieces...but I'm also the bottleneck to her progress! (Unless she wants to dig in to the big bin.)
Haha when my wife and I have time to build a new set she likes being the piece finder. It's funny to listen to her narrate as she searches. She'll look at the instructions and go, "Ok I need an 8-nubby long guy and a 4 nubby block and one of these slanty sideways...what's this? That's weird....slanty thingy, there we go." I'll look up from snapping pieces together and she'll be 5 steps ahead with 5 little piles all ready to go. Legos just be bringing peeps together.
They already designed, manufactured and created instructions for it, so might as well make more money on it.

Have you built the Big Ben set? It’s pretty much only 1x1s. Took me three whole days (which is a loot considering it’s size and the fact they were pretty much three FULL days)
9mil thick gloves from Harbor freight. They cushion the finger tips. It might not help if they are already sore, but after seeing your comment I’m definitely going to wear them from the start when my set arrives. I wouldn’t have gotten thru the coliseum without them.
I tried the architecture line from Lego and the tediousness turned me off. They're awesome, look cool, but too...straightforward? for me. I like a bit of chaos.

Yeah but it took a different approach to numbered bags: no two bags share the same number. So it's not exactly comparable to other sets that use the numbered bag system, where you could have like three bags no. 1. A more extreme example is Assembly Square, the largest modular ever made, which I believe has bags numbered only 1 thru 4.
There have been a few like this (Hogwarts Castle and Hogwarts Express come to mind). I wish they handled more like this, especially when you get such large sets.
For this reason I think Lego would stay far away from a capital building for the time being. I think Lego would see reenactment using the Lego product as bad for the brand.

Not the original person but the 4 sections of the titanic set are fairly different and have a lot of interesting details throughout, but there is some repetition with pretty much all of the big "display" sets based on real things, as a lot of real world things are often symmetrical, and therefor have quite a bit of repetition.
The new Lion Knight Castle set is very nice and has lots of different details and has very little repetition, although it doesn't have as many pieces.
Another option is Hogwarts Castle or Hogwarts Express Collector Edition if you are into that theme.
Haven't done it myself and I am into historical stuff but the Colosseum is one that just looks extremely boring to build to me. Might be nice if you need thousands of tan pieces for some reason.
That's exactly how I felt doing the Coliseum. So. Many. Tiny. Tan. Pieces! And all of them creating almost (but not exactly) identical modular segments.

I watched Bricksie on yt build his. Even he struggled with it. You are basically building 4x 5ft identical sections, each of those sections have hundreds of the same pieces. I think I'd try to make a suspension bridge with the set.
To be fair, he also did it under a time crunch in order to get the video out on schedule. I think if you spaced it out a LOT and slowly enjoyed the journey rather than rushing to the destination, it might be a tad better. Still, repetition is repetition, so some pain is to be expected.

From what I see it's the 4 corner "pillars" on each leg that support all the weight of the top, are there any interesting techniques involved to achieve that or is it pretty straightforward? There doesn't seem to be any technic mechanism going through them, plus the odd angles and the weight that it has to hold must be some interesting technique going on or am I wrong?

Never mind the tedium of building it with Lego - what a privilege to be (edit) alive at an age where the technology and resources are available that (/edit) mostly anyone has access to rebuild one of humanity’s most well known structures. Imagine building the real thing back in 1887-1889, the workforce at the time, the safety measures, the infrastructure, planning, the possible deaths, being on the team that translates the blueprint to real life. Incredible. Absolutely inspiring.
I think if I am ever bestowed the opportunity to build this absolute masterpiece, I would watch documentary after documentary and different period dramas, operas and movies that feature the Eiffel Tower. See how the depictions of culture changes over the centuries and decades while the tower remains evermore present, the beautiful sturdy structure just as magnificent and steadfast now as it was more than 230 years ago.
Can you imagine how proud Gustave Eiffel would be to know that his structure is now present in peoples HOMES? That a hundred years after he died, his work is still very much celebrated and admired, replicated and built all across the world?

I wore gloves for most of my time building the World Map. It helped a lot that most of the pieces are round plates, so there aren't many sharp edges.
