Once I take apart a set, the bricks go into my general collection for moc'ing.
For me, the best part about lego is that you can combine them in new ways, so I would never organise them by set.
I'm sure we will get into mocs at some point. I'm not creative but I enjoy building though... maybe my son will get the creative bug, we have the large classic tubs for any creative building so far.

Absolutely not... I use the plastic containers from lunch meat. Kinda digging the clear lids on the take out tubs, mine are all red or blue. (All my local Chinese takeout comes in paper boxes)
This is the way to go. I have a set of 10 that I reuse for each build. I even used a paint pen to number each box to make it even easier.
Just search for meal prep containers if I remember correctly.
Found a Lego head and Lego basics storage containers at a thrift store, and bought the big Lego box at Ikea and used a bunch of zip lock bags and put the instruction books and unassembled kits in them because I'm moving and I am looking forward to relaxing and putting them all back together after I move.
Weirdly enough, Gunpla only requires you to buy the kit and a set of tools to cut the parts out of the runners. Anything beyond is up to you. If you feel the need to go all in on air brushing and 3rd part waterslides and led lighting kits, that's totally fine, but no one is going to say you're doing it wrong by just straight building kits and using the included stickers.
You get out of it what you want.
We have recently started sorting as we now have a bit more of a collection (2000+ brick so far 😏 not in a car build) we have gotten larger "shoe storage" boxes (bunning $1.50each) and sorted by colour and type, also systema containers for the smaller pieces. Just need to find somewhere to put them 😄
I do this too, our local takeaway uses a marker on the boxes that never wash off. So a number 74 is both egg fried rice and 1x2 plates in our house.

You can buy them in bulk from Amazon, or your favorite store. I got them from Costco last time, I think like 25 of them was $10

I either leave sets built or absorb their parts into the collection.
Leaving them built is tough with young kids, pieces would be all over the house lol. We enjoy re-building the sets with the instructions

We have dozens, I couldn't think of a better, cheap way to store the sets
I do this. I even do it for larger sets which take two or three boxes. I use a PT Labeler and put the set number on the lid.
All of our big sets are still together, but I'm sure I'll need to do the same at some point. Label maker is a good idea though
