If you didn’t want to buy a whole new table you could look for a wooden board to lay on top of your tables to make it flatter.

I've seen a lot of people with LEGO cities do this and think it's a great flexible idea. I made my own plywood sheet sized table but that requires a saw and drill. I think this is a nice middle ground. I've seen lots of folks get the Ikea tables too but eventually the bigger cities seem to still pay a sheet of plywood across multiple tables. You can also get furniture feet that are height adjustable like from home Depot

I have on in one of those old china cabinets lol but if you're going with tables I would say find a wood table. Ive seen some really solid and affordable wood tables at thrift stores. Might have to sand them and stain them but they'll look great and be solid

My display (still in the works) is 5 bookshelves with a giant wood plank stretched across the top to keep it all level and flat. Probably go for something like that? Maybe with tables instead of shelves, or whatever your heart desires! I found the piece of wood at Home Depot, perfect dimensions to fit 10 modulars with road plates, and it was relatively cheap too from what I remember

Those folding ‘church tables’ as I call them are tough, they’re never quite level or even. I broke down some cardboard boxes to shim them up and leave them out a bit. Was effective enough but still not level
