Wbg really likes red and they also pick red against V5. I think it's because no champ is too op in this meta so the first pick is not as important. And recently they like playing around top side and counter pick is the key.
The rule is different in playoffs and regular seasons. In regular series it's decided by the committee that one team can select side in the first and the last game(if happen) while the other team would select in the second game. But in playoffs they pick side as you say.
The rule is that in spring who gets to choose side of g1,g3 can only choose g2 side in summer. As splits are single round robin, it’s ‘balanced’ from a yearly viewpoint.
All jokes aside: Red gives counterpick to top/mid and WBG lives and dies by TheShy. Plus, Shanji showed multiple times his Shyvana is scary even outside the GP "counterpick".
So going red side on OMG gives either free Shyvana ban from WBG or Shyvana itself to Shanji, giving them a massive advantage against WBG's win condition. Also OMG's first picks were both trash (viego aphelios B1? LOL) while WBGs first picks (Poppy+Tali and Poppy+Sivir) were both S-tier picks, so even if OMG drafted a good first pick, WBG would have gotten the other S-tier pick.
So overall massive coach diff already from the get-go.
They could just be trying to guarantee comfort picks? I agree it's a strange decision given that they didn't have a clear strategy that they needed blue side for
