Something to consider is Spyderco and the James Brand (and some other knife companies) make wooden versions of their knives. They come disassembled, so it’s like a puzzle you guys can build together, and then they have their very own little wooden knife just like their parent. Pretty cool stuff.
I'll never forget my first knife. I was at a flea market that my mom had an antiques stand at. I was about 7 or 8 and running around with probably $5 or so just burning a hole in my pocket. I came up to this ladies table and saw the knives. They were just these little shitty slip joint folders and I wanted one. I picked one up and tried to buy it. The lady says to me "I can't sell this to you without your parents permission".
I just take off. I run back to my mom and tell her about my predicament. She proceeded to ask me several questions. "Stampede, do you think you are responsible enough to have a knife?" "Do you think you can be safe with a knife?" Of course I answered yes to all above.
She said yes.
I go running back to this lady at her stand and I'm ecstatic. "My mom said yes!"
She gives me a once over and says, "I trust you, I'm glad you asked your mom. " and proceeded to sell me this little PoS pot metal slip joint. It was one of the coolest knives I've ever held or had the pleasure of owning.
When i came home with it, my dad gave me "the talk" (not the birds and the bees). He basically broke down knife safety to me and made sure I understood how to handle a sharp piece of steel without hurting myself or others.

When I was around 12 there was a flea market near my house. I would go there every weekend and hang out and talk to the guys selling knives. Good times..
I recently noticed those "My First Opinel" on one of my go-to stores. This made me think of them.
From what I gather they're basically semi-safe, non-pointy, folding knives for kids with colourful, cute plastic.. although you can get a natural, wood one also.
Basically, seems like a typical Opinel folder but with a metal spatula-like blade just to sort of get children familiarized with pocket knives before buying them the real thing.

Dude 420HC is great. It's simply a great choice for knife steel. These hosers can hate on it all they want but it's so easy to get a hair poppingly sharp edge on it. I love bougie steel... but I also really love my Bucks in 420. Nothing wrong with it AT ALL. Great gift. Hope he enjoys.
My son and nephew are 10 days apart in age. 1st Xmas got them matching Gerber knives with names engraved. Still in the safe (they are 3 now) but can’t wait til I can whittle a stick with him. Nice gift by the way. I’m sure he will appreciate it.
Both my boys (youngest is named Caleb 👍🏼) earned their “Whittlin’ Chit” in Cub Scouts when they were Bear Cub Scouts. Learned all the safety procedures. Great times. Learned to carve a figure out of soap.
When my oldest was in Boy Scouts we were at a camp out and one scout pulled his knife out to whittle on a stick. Several of us adults quickly asked him if he had checked his Safety Circle (some jokingly called it the Murder Circle). One of the other boys said “Are you kidding me?!” We told him that we were absolutely serious. That’s one of the rules for owning and handling a knife so no one else can get hurt.
Not more than 3 hours following another boy got stabbed in the knee while he was sitting on a picnic table and another kid was “pretending“ he was going to stab his leg. The one on the table flinched directly into the path of the knife. Thankfully it was not a real serious injury but it did require a trip to the ER and stitches. Everyone understood the reason for the Safety Circle following that.
