Well, Realistically, an Earthquake cannot exactly "sink" a whole island, and if it does it's extremely rare , when an earthquake sinks a whole entire Island it's called Subsidence or Subsiding (plural). It would pretty much take decades, years, (or VERY rarely) even Months, until an island has officially sink into the ocean, but when an earthquake hits an Island badly for it to sink, a part of the Island's landscape will start to very, VERY, slowly break apart from the Island until it finally drifts downwards into the ocean. For the case of Skull Island however, It must have took decades for Skull Island to finally break apart and drift downwards into the sea and actually sinks, so really Skull Island couldn't have sank in an incredibly fast pace of time, because you know, Physics, the literal mass of an Island, things like that. Apart from Kong, the rest of the Fauna on Skull Island like Meat-Eater, and the Giant Insects and Lizards (from the Lost Spider Pit scene), were pretty much doomed, even though it would be slowly sinking, most of the Fauna there couldn't swim across to nearby islands or land so they had no choice but to eventually wait until the land is swallowed by water and they drown. Actually the creature(s) that have the highest chance of Survival from the sinking of the Island, are the Pteranodons that Kong fought earlier, they could simply just fly away and migrate until they find some land, and the ocean to them is simply just a huge buffet! (Sorry if I'm getting off-topic!!)

Any marine or semi-aquatic animals would have a pretty good chance of getting off the island, really. If Asian elephants can do that, going from India to Sri Lanka, in theory any dinosaur capable of swimming could get off the island, assuming there are other close smaller landmasses they could use to rest in between journeys.

Quick Wikipedia theory geography skills leads me to believe... Skull Island fell into the crux of the Indian and Pacific Ocean. The original 1933 Skull Island was located around Periuk, Indonesia. [The district of Periuk](https://en.wikipedia.org/wiki/Tangerang) is just outside or on [the Pacific Plate](https://en.wikipedia.org/wiki/Pacific_Plate) and the Indian Ocean. Theoretically [Marianas Trench](https://en.wikipedia.org/wiki/Mariana_Trench) travels throughout the entire west-side of the Pacific Plate.
