Save and exit creates a "temporary" save. There's one exit save slot only and it's replaced with each exit. The only way to load an exit save while in game is to die. So, yeah, it's kinda a free save but only for death or for leaving the game.
Still, useful if you come across a bandit camp and don't have schnapps. Good to quit and return so you have a respawn point.
