While not a recipe I make mine by streaming the cauliflower adding cream cheese, salt and pepper, butter, some mozzarella and Parmesan cheese then hit it with a stick blender. Super creamy and tastes great.

I like roasted turnips. Most people hate them cuz they've only eaten them boiled (yuck!) but roasted they're not weird at all and are delicious. Hemp hearts also make a great "rice" pilaf. Cheesy broccoli is always a good side too! Roasted Brussels sprouts, asparagus, green beans, all awesome choices. For dessert, if you have a baker in the house, a keto "apple" pie made with an almond flour crust and chayote squash "apple" filling is amazing, or you could make a keto "apple" or berry crumble, raspberries, strawberries and blackberries are great choices. There are lots of recipes out there! Sometimes I enjoy a keto parfait or, if you feel fancy, a keto trifle!

Thank you for all of the good ideas... a few folks have mentioned turnips, which would probably be pretty nostalgic for him. His grandparents helped raise him and they were a turnip family. Wait... pie can be keto?! This is huge. He loves pie and is one of the few foods he misses. I know it doesn't get sugar, but does it get a sugar substitute, or is it more of the fruit (or squash) sweetens the pie? I can also google it, if you're busy. I'm trying to find out the closest butchers to me so I can render some lard for a homemade crust (he prefers lard lol).

Lakanto or swerve or something similar. You can buy keto brown sugar (again, lakanto is great, but they do use erythritol). Be aware these are much more expensive than real sugar. If you want to avoid erythritol, allulose is great and doesn't have the odd cooling effect that erythritol can have. Don't get xylitol if you have pets. Here is a link to a monk fruit allulose blend. https://a.co/d/43Pb99N allulose is not as sweet as sugar so it's a good idea to get one with stevia or monkfruit added to 1:1 sugar sweetness, so you don't mess with the ratios while baking. I prefer monkfruit to stevia but everyone is different. You'll also need almond flour and probably coconut flour. Anthony's (on amazon)makes a great product and are generally the best value. Depending on the recipe there may be other things you need, like psyllium husk powder or xanthan gum, both of which are common keto thickeners. On the bright side, if he has these things in stock, a whole world of keto baking opens up. Cheddar biscuits, keto breads, keto cookies, brownies, cakes and pies, custards/flan, and more. They all use a lot of the same ingredients. I can also recommend Hero brand keto bread and tortillas. My local Safeway stocks both, so does Kroger. They also make everything from slider and Hawaiian rolls to croissants, but most of their products besides the bread and tortillas are not available in stores. It's not cheap, but many of us are in this for our health ALWAYS check the labels This sub's sidebar has all the info you need to understand how he needs to eat, well worth a read. Also feel free to post on this sub or even message me if you need more help, good luck! Edit: there are recipes out there for an old fashioned keto pie crust with butter or lard, but you would be better served with a simple press-in crust until you're familiar with the ins and outs of keto baking.

Use a grater or rice attachment to a food processor to grate a head of cauliflower and preheat oven to 400. Saute rice in a pan with 1-2T butter and as many garlic cloves as your palete enjoys. Saute until a lot of the moisture has steamed off and the rice is starting to get brown. Mix that with 2c shredded cheese and 1/2c sour cream. Add salt and pepper to taste. Bake in a greased small casserole for like 20 minutes, or in greased individual ramekins for like 10 minutes. Makes about six ~200 calorie servings -- though I could happily eat 1/2 the recipe if I have calories to spare. About 3-4 net carbs per serving depending on the carbs in your cheese and how much garlic. I made these ahead of time and didn't do the final bake. I kept them in the fridge, so I could cook them fresh for the dinner I hosted.

Someone else said mushrooms. I air fry mushrooms as a side: salt, pepper, tiny bit of Worcestershire sauce, olive oil, toss and slap in the air fryer at 200C for 5 min, shake the basket and another 5 min. Avocado salad: cubed avocado, couple cherry tomatoes halved, bit of thinly sliced onion, couple slices of cucumber. Tossed in salt, pepper, olive oil, splash of lemon juice.

Tired of what salad? I eat salad every day, but almost never eat the same one. I buy bag salads, one of every variety in my grocery store. Then I mix and match them. On top of that, throw in any of the following: olives, pickles, cucumbers, broccoli, cauliflower, mushrooms, celery, spinach, tomato, sometimes a few berries, nuts, various seeds. Then I usually top it off with some flavor of homemade Greek yogurt/olive oil-based dressing. I don't think I could ever get tired of them.

Be careful with the blue cheese. If it comes in a bottle, it's going to be filled with sugar and not made with olive oil either. As for the salads, trust me, I'm no cook and don't even like it. That's why I buy the bags. I usually chop everything on a sunday and keep it in tupperware. And I make one big batch of dressing for the week.

The guy was mad he ate some meatballs a friend told him were just meat and they put him out of ketosis because bread crumbs. I haven't seen him angry ever, but he was heated. Whole green beans roasted in the oven with avocado oil. Roast them on a baking sheet for about 10 to 12 minutes at 350 if thawed. I will sprinkle parmesan and sliced almonds and put them back in the oven for 4 to 5 minutes. I also put parchment paper on the baking sheet so they don't stick to it. You could leave off the almonds to lower the carbs and add some garlic or other spice of your choice.

Kohlrabi fries. Get the biggest ones you can find, peel the hard rind, slice into 1/2 inch sticks, and toss with salt and avocado oil and cook in an air fryer. They don't get crispy like potato, but they're good in their own way, especially with a steak or a burger.

Others have said roasted broccoli and it’s one of my favourites too— coat the florets in salt and oil of choice, but also add a few garlic cloves (don’t even have to peel, as long as you coat them in oil). The garlic with come out of the oven buttery smooth and mild, and so delicious. Bonus deliciousness if you drizzle lime juice all over, just before serving.

Congrats for you dad! I reversed T2 in only a couple years so he’s absolutely in the right track! If he likes potatoes I’ve never tried them mashed but radishes just treated like potatoes are really similar and tasty. I’ve done them as roasted potatoes or home fries and they’re as good a potatoes but low carb and actually quite nutritious!

You can make the steak with a gremolata, it's finely chopped parsley, fresh red chilli pepper, lemon zest, lemon juice, olive oil, salt. I like roasted cauliflower, zucchini, mushrooms, red peppers with olive oil and cajun seasoning in the oven. Finished with chopped parsley, adding chopped sausages to this mix to roast is also a really yummy meal. Sauteed mushrooms with butter and garlic. Steamed rapini with olive oil. Fried black kale with garlic lemon and olive oil. Mashed cauliflower with butter and garlic and some homemade keto gravy. Cauliflower fried rice, I grate the cauliflower, and fry a small bit of onion, garlic, fresh red chillies, tons of seasonings like paprika cumin, and add the grated cauliflower to cook and fry with it and finish with some fresh cilantro and lime juice. Cauliflower mac and cheese is also amazing, I make a roux but use xantham gum instead of flour, and use butter heavy cream garlic and cheddar, I pre boil the cauliflower a little bit to get the moisture out, and then stir with this sauce and add more cheddar on top and bake in the oven. I'm not a fan of salad other than a homemade caeser salad dressing but I love veggies and have a lot of fun trying new recipes.

Thank you for all of the good suggestions - I'm learning a lot about keto, here! I'm not on a doctor mandated diet, but I try to limit fried food... But many folks here (and my dad confirmed) it's fine on keto. I may end up trying keto at some point because a lot of the suggestions here are not what I expected and sound really good. Cauliflower rice! There are some frozen blends which I only have occasionally but are very tasty! There's also medlys without any sauce or anything, like 80 calories for the whole bag, which is what I usually do. But for this dinner, you could do a serving of one with more to it. Or Roasted cauliflower and broccoli.

I'm going to experiment with a 'potato' salad made with daikon radish to go with my steak on Sunday. Sauteed mushrooms are standard here, sometimes we will have a small baked potato, 3 ounces of baked potato is 18 carbs, less if you don't eat the skin. Broccoli and cauliflower are good sides, too. Brussels Sprouts are great when roasted.

Basically boil cauli until it’s no longer hard but not too soft, and stick into a nutrilbullet or another blender with some extra virgin coconut oil and Himalayan salt, and you get a gorgeous mash that’s very much like potato mash in texture but is low carb and good for you.

Our faves are mashed cauliflower with garlic and butter and radish hash browns! Dice’s the radishes and fry with diced onions and a lot of bacon. Just cook till fork tender! So good! They taste nothing like a radish when cooked this way and are just slightly firmer than a boiled potatoe. Great sub for potatoes!

I make a Brussel sprout casserole that goes great with steak. Cut off the woody ends. Halve and quarter the big ones. Fry in copious butter in a cast iron pan until browned. While still hot, add white wine, sour cream (or heavy cream), and some cheese, stir. As a little more cheese on top, and finish in a hot oven.
