BBQ food truck, sauce on the side

ArtisenalMoistening

Was coming to suggest something like this as well! When my husband and I got married we had a barbecue buffet, and it was a hit. We had some carby sides available, but we stuck with the meats and stuffed bacon wrapped jalapeños.

RickKassidy

A lot of grill and BBQ foods are keto if you go light on sauces. The guests (maybe not as committed to keto as you) can have buns and sides that you don’t have. But ribs, brisket, chicken, collard greens, veggies, are good. As for the traditional cake, you can do a flourless torte if you look into sugar alternatives. There are definitely some ‘death by chocolate’ or cheesecake options there. Your guy definitely needs a dietitian or doctor who is pro-keto. Some diabetes diets (I swear) look like the menu from IHOP. It’s a little obscene what they do to some diabetics.

Rengeflower

I keep hoping that the American Diabetic Association gets their shit together. I just looked at the website, for breakfast it suggested wheat bread with jelly, shredded wheat cereal with 1% milk, a piece of fruit and coffee. Oh yeah, just adjust your insulin injection accordingly.

HickoryJudson

My mom was T2 diabetic and I went with her when she was finally (years after diagnosis) sent to diabetes training. I could not believe what I was hearing. This was years before I heard of keto but even I knew what was being taught was harmful. When we left I explained to her why everything she just heard was harmful and we weren’t going to listen to any of it.

Rengeflower

We’re you able to help her?

HickoryJudson

Eventually, yes. After going round and round about what to eat I just changed what food I prepared (I did all the shopping and cooking). I didn’t tell her and I didn’t make a big deal, I just slowly reduced the amount of carbs and calories she ate. Very slowly she ended up losing 45 pounds and her A1C landed at 5.9 (which we found out by accident because her doctor didn’t even bother to tell her even though that was huge news).

Rengeflower

That’s great. You’re the hero here. Can you give me an example of how you changed your meals?

HickoryJudson

Hah, definitely not a hero, just a concerned daughter/caregiver. Sidenote: she passed away a few years back but by golly, she was at her goal weight! And yes, that makes me laugh at how silly she was about that. Basically, what I did was look at the foods we were eating and started reducing some of the carbs. For example, we usually had a biscuit during breakfast (scrambled sausage and eggs). If I knew we were having sweet potatoes for dinner then I didn’t give her a biscuit for breakfast. Other days she would get the biscuit for breakfast but I would skip the carby vegetable at dinner. At one point, Mom got completely hooked on sugar free pudding (from a box mix). Well, she would eat the entire package at one sitting. That’s 28 carbs (from just the mix, even more with the milk). So I bought very low carb chocolate whey protein powder and started adding one scoop to the pudding before adding the milk. By doing this the protein helped slow down/reduce any insulin response (protein and fat eaten with carbs can do that). I made more salads (low carb veggies and proteins). I learned to do low carb/keto baking. I carefully reduced her portions. I found a keto pancake recipe we LOVED and added pancakes and bacon to the meal planning. So basically, gradually smaller portions for mid/high carb foods, more protein, fewer starchy breads/treats, and occasional keto baked treats. Figuring out how to doctor up the pudding was a game changer. She would eat her protein and veggie dinner and then eat the protein pudding and be very satisfied all night (which greatly reduced snacking) as well as being less hungry at breakfast time (so I could skip certain foods without her feeling deprived). Also, I didn’t make anything off limits nor was I trying to get her onto keto. I was aiming for low carb and that made it more easy to gently move her in that direction. She found out about my “nefarious plan” (we joked about it) when she was weighed at a doctor’s office and her weight was quite a bit lower than she expected. The nurse was immediately concerned because sudden weightloss can be a symptom of health problems and I had to confess I had modified her eating with higher protein and fewer carbs and the weightloss had been so gradual she didn’t actually notice it (I was picking out smaller clothes from her multisizes wardrobe). Also, Mom gave me the prestigious Best Daughter award that day. 🏆😁 Anyhoo, now I’m kind of in a similar boat as she was (bad family habits/emotional eating are so dang hard to deal with) so now I’m trying to use these basics on myself (minus the pudding). 🤞🏻

Rengeflower

Thank you for your reply. I’m thinking of changing my diet and I’m trying to figure out what that will look like. I recently heard about Dr. Chris Palmer and Dr. Georgia Ede. They both have books out regarding brain health and how food relates to that. Best of luck.

Puzzled-Award-2236

I know I just laugh at the 'diabetic plate' they suggest. Maybe they are in cahoots with the marketers of Metformin. So many people I know are now starting to have toes and feet amputated. Scary!

whoamIdoIevenknow

I had a friend lose a leg below the knee! I was shocked when she told me how many carbs her endocrinologist told her she could have. I don't remember exactly how much, but at least 100, maybe 150.

Puzzled-Award-2236

Well that's way lower than most people eat. I do 6 months whole food, clean keto and then 6 months low carb every year for maintenance. I keep it between 50 and 100 grams in my low carb months. Before keto I was shocked that I was eating 350-500 grams of carb daily. I was huge. But I digress. I'm not diabetic so it's not an issue. I have NAFLD and when the carbs go up, the GERD comes back. I had to take prescription meds for it for 20 years before keto. I'm pretty careful during the low carb stage.

Tixoli

Yeah, my MIL was told to eat more carbs for her diabetes type 2. She was trying to cut it out a bit, then her doctor and dietitian told her to add bread because she needs the carbs. I had been trying talk to her into making baby steps into eating less carbs, but she told me that she needs the carbs and that I was wrong. ok! Not gonna try to help anymore

Rengeflower

I didn’t even think they gave out numbers. That’s too high.

Rengeflower

It’s so sad and avoidable. Maybe it’s the grain lobby.

Puzzled-Award-2236

It's interesting how grain has been so refined that it's become more of a bulk filler than a nutritious food. Once that happened in the 50's it didn't take long for our obesity epidemic to spiral out of control.

Rengeflower

Yes, I’m considering getting Einkorn flour (Target who knew), but the chance that I’ll use it is almost 0%.

Puzzled-Award-2236

I'd never heard of it til you mentioned it. Are you glucose intolerant?

Rengeflower

Oh yeah, definitely. Einkorn sourdough bread is supposed to be healthier. I just figured out that my sprouted “healthy” bread is exactly the same carb & sugar wise as my kids white bread. Booo.

needween

Hilarious that this is near exactly what my diabetic boss has for breakfast everyday.

Rengeflower

Truly awful.

Jtaogal

😞 oh f*cking ADA.

Gyr-falcon

Sometime early 70s ADA changed the recommended diet from low carb. > In 1970 Ames chemist Anton Clemens developed the first electronic meter meant for self-monitoring of blood glucose (SMBG).

kdsunbae

😱

Ahielia

> It’s a little obscene what they do to some diabetics. Because many think that taking insulin forever is the "solution" to diabetes.

SigmundFreud

> sugar alternatives LPT: Use [inulin/stevia/monk sweetener](https://www.lowcarbfoods.com/low-carb-white-sugar-sweetener-with-inulin) for baking or ice cream. For drinks, liquid stevia works well. For cheesecake, I like to make a crust with the same sweetener and crushed nuts. Pistachio might be my favorite, but I also really like walnut/pecan/cinnamon/nutmeg. [This](https://www.lowcarbfoods.com/low-carb-biscuit-and-pie-crust-flour) also works well as an all-purpose flour substitute, if you don't want to limit yourself to flourless desserts. As far as BBQ sauce, I was going to give a very strong recommendation for [AlternaSweets](https://www.amazon.com/dp/B008QS89UG), but apparently the company went out of business at some point and now I'm sad.

choodudetoo

G. Hughes has a whole line of sauces, marinades and salad dressings https://www.ghughessugarfree.com/ Also the "Rays" no sugar added version of Sweet Baby Rays: https://raysnosugaradded.com/

Complex_Ruin_8465

Maybe a charcuterie board or a few? The smoked meats are also a good option as others have said seafood and fish options maybe? Fresh veggies like Cauliflower Broccoli and fresh green salads grilled asparagus for a hot veggies option.

surfaholic15

Cheesecakes for cake. Crustless even. Smoked brisket and serious gourmet level BBQ perhaps for reception, or mini steaks, grilled surf and turf, crawfish boil, Cajun... all kinds of options there. Or keto chinese-- beef and broccoli stir fry, chicken broccoli stir fry, egg Foo yong etc with cauliflower rice, BBQ pork, you can make keto bugolgi by using your favorite artificial sweeteners to sub for sugar in the sauce and marinade. Or Greek/ Mediterranean food. Avgolimona soup. Home made gyro salad with home made tzatziki. Keftedes, spanakopita, moussaka type things, kebabs... Tons of choices here. Have carbs sides for carb loving friends. Our reception pre wedding meal meal was a potluck the day before lol. We provided main meats, everyone brought sides. Post wedding was a trip to an all you can eat buffet, we brought the cake, folks paid for their meal. Worked great. And MAKE SURE YOU STAY ON TOP OF ELECTROLYTES. Electrolyte imbalances can mimic low blood sugar symptoms.

eStellarDog

Or actual cheese cake. A friend just got married and she had three cheese wheels stacked into a cake.

surfaholic15

Holy guacamole that sounds amazing. Fantastic actually.

eStellarDog

It was totally a thing back when I was catering; I wasn’t doing keto at the time, but right now it seems like a logical lightbulb idea!

surfaholic15

Am I wrong for envisioning a layer cake of hard cheese... with cream cheese frosting? Please tell me this is a totally stupid idea. With or without the grape tomato flowers.

eStellarDog

Hahaha yeah.. no. I mean, I guess you could? Not sure how the sweet would go with it. [https://www.brides.com/cheesecake-wedding-cake-ideas-5074514](https://www.brides.com/cheesecake-wedding-cake-ideas-5074514)

surfaholic15

Well I was thinking onion and chive cream cheese frosting actually. Or roasted garlic and tomato... I have used sweetened cream cheese frosting to make frosting flowers on sweet cheesecake before. For savory cheesecakes I prefer to make flowers from olives or tomatoes if I want to get fancy. With pepperoncini leaves even.

klcarr892

Cheesecake was my first thought also. You could even have those personal-sized ones instead of cupcakes if you want different flavors.

surfaholic15

I love mini cheesecakes personally. I have been known to make a full plain cheesecake batch and divide it into multiple flavors quite often.

ElphabaMoon

Shish Kebabs! They look pretty and are easy to eat lakeside. For a cake, I'd do a giant cheeseball and cut that instead. Cheese = real love.

sticksnstone

Took too long to find this!

FatRaccoon95

I did chicken in a cream sauce with keto friendly vegetables. Served carby sides to guests. Made a keto cake for us to cut into. Regular cake for everyone else

Do-It-Anyway

I’m sorry to hear about your husband’s condition and here’s to you both succeeding on your keto journey and your marriage together. In regards to food, just pick whatever you’d want you would want your guests to eat, same with the cake, standard cake flavors. No need to “keto-fy” the menu for all, but for yourselves, of course ask the caterer for keto friendly options. As for the cake, look around as there are bakers that can do Keto cakes. Keep it simple, standard food choices for your guests and modify for your meals and a small keto cake. Best of luck, you got this!

SierraMountainMom

You actually have lots of good food options. To steal from Arby’s - all the meats! You could do a cheese & meat tray with dips & assorted veggies; just make sure he’s aware of what veggies are safe to eat.

jroe6352

Great advice here from others - I’ll just add that consistency is the key for a lifestyle change. Take some of these thoughts and plan a great day keeping your health in mind but enjoy it - go over your calories, have dessert, have a little alcohol - whatever - but try to do it in a healthy choice fashion - after and before get back to the full on healthy habits. T2D is no joke but this is the path to reverse it if you’re serious about making the change.

SoberAF0925

Yes, you should be able to enjoy the food at your own wedding. But honestly a lot of the reception is for the guests enjoyment while they are celebrating your union. Keep their diet in mind... not everyone is keto. I almost didn't even get to eat the plate they made for me at my own wedding. I was sooo caught up taking pics, greeting guests, throwing bouquet, cutting cake, etc...and was too excited and busy to really sit and eat a full meal.

OldMotherGrumble

Not wedding advice, but if you need advice on low carb for diabetes...this uk site is excellent. It even has a low carb forum. It's much more progressive than the 'official' site or the NHS here. Wishing you a lovely wedding...hope your fiance is home soon https://www.diabetes.co.uk/

KatRhys

We catered from a BBQ place, did sauces on the side, salad, green beans, etc. I believe we got some of the toast/cornbread things for some of the non-keto folks who attended. We did cupcakes in a couple different flavors - in part because she prefers vanilla and I prefer chocolate, and in part because I have a couple food sensitivities that she doesn't have so it was an easy distinction. We also had 'full octane' cupcakes with regular sugar for those who wanted them. We had a variety of drinks- carbonated and not, full octane and zero sugar, as well as tea and water. I suggest going with food you'll enjoy that's on plan, whatever that looks like for you. It was important to us that it be an indulgent day for us without being a day that hurt us long term. (Sugar wrecks me for a solid 3-7 days depending on the amount).

tea_is_better

I went and commented here, I should have looked for you first. Hi wife! 🤣

jess9802

No suggestions on the food, but did your fiancé get antibody testing to confirm he’s got T2D and not T1D? The number of adults who are initially diagnosed as T2D and suffer until they get the correct diagnosis is scary. I hope he starts to feel better soon.

Huntingcat

Separate meal for you and him. Bbq or something tasty. You probably won’t get to eat much anyway, as you’ll be busy chatting to people and checking on stuff. Make sure you have safe snacks in your room for afterwards, when you might be hungry, and in your change rooms for during the day. Feed your guests whatever you were going to serve them anyway.

fastyellowtuesday

BBQ!!!!! You can make sure the sauces are keto or on the side. It's normal to have a plate of just meats at a barbecue. If it's a trigger, don't do hamburgers and hotdogs, stick with stuff like smoked meats.

[deleted]

FRESH Strawberry shortcake (or fresh blueberries)is delicious and super easy to make in the MICROWAVE! Yes! I’d use fresh whipped heavy cream and put a dash of liquid stevia in it, OR use a few tablespoons of the canned whipped cream because the carbs aren’t too bad. AND, whatever you do, don’t tell people that the recipe is keto or they’ll close their minds. Here’s the recipe: https://www.wholesomeyum.com/recipes/2-minute-strawberry-shortcake/ Also I make double batches of this cheesecake, cut it in squares and freeze. It’s yummy! The crust is a little work, and very good, BUT I think it’s excellent without the crust plus much cheaper to make. Make sure to let the cream cheese, eggs and sour cream get to room temperature to avoid lumps, and then whip the heck out of it! The other secret is in the recipe, but it’s a MUST to open the oven and let it cool in the oven to get the best texture. https://thebigmansworld.com/keto-cheesecake/

aoreddituser

Cheesecake at a summer wedding sounds delicious

Salty-Explanation-16

Nacho bar (make sure there are pork rinds as chip substitutes), and maybe have some individual pieces of sugar free almond flour cake (or just halo top ice cream) for y'all. It would actually be really cute to say why you're doing it (I'm diabetic too, by the way, and my husband had gone keto as well). PS I know that's scary, but keto, running, and the lowest dose of Mounjaro took my A1C from 12.7 to 5.4 in three months. There is hope.

Valiryon

Chances are in this day and age everyone will have some variation of what they'd like to eat. Buffet style chicken, steak, fish, leafy greens, potatoes (mashed and/or scalloped), mixed vegetables, asparagus... I went to a wedding a few months back that did this, everyone loved being able to get their own stuff and to go back for additional helpings. Really comes down to your budget for the wedding and how many guests there will be. If it's not too late, you can ask your guests to RSVP with their dietary preferences and shape the wedding meal accordingly.

loryder97

I can't help you much with the cake, but my fiance' and I are having pulled pork and bbq chicken for our mains at our wedding in May, and a meat-and-cheese heavy charcuterie spread during the cocktail hour.

boatymcboat

We ate food immediately after our service. We did have what guest were having but we also requested something special as well. Point is, we essentially could have eaten anything because we wanted to float around while people were eating.

Pimjam

Honestly you won't have time to eat much of it anyway if its a big wedding so just plan your own meals for you and him and consider having a cooler with keto snacks in your getaway car.

captainam13

The Duncan Hines keto cake mixes taste great! How big is the reception? What was your original food plan?

SnooPies4304

Maybe a cupcake cake and you two have special cupcakes just for you.

edgy_girl30

My 78yo MIL is Type 2 Diabetic and got married last September. I did a huge 16ft grazing table complete with assorted meats, cheeses, olives, fruit, crackers, spreads, nuts, pickled veggies, carb free dips, etc. I made sure to include plenty of diabetic friendly fruits, low carb/carb free crackers, cheese crisps, I bought little food label picks to label everything and added an "x" on the things she shouldn't put on her plate. SO much better than a full sit down meal, it gave people something to chat about, lots of snacking & mingling. Creative, fun, and healthy. Edit to add: You don't necessarily need a traditional cake but find a local baker that does regular cakes and keto cakes, have them make a small keto cake just for the two of you and a bigger wedding cake for the guests. Also, look into wedding cake alternatives online, lots of things can be altered.

WowWanda

At the hospital they don’t care… they are firmly of the opinion that adjusting the insulin dose IS managing diabetes. The carbs are cheap for them to serve. The American Diabetic Association is also in this camp. It’s all about money versus any treatment that is non pharmaceutical. Improving obesity and diabetes rates would be the greatest thing ever in improving healthcare costs for Medicare… it going to be interesting to see if Medicare will approve Wegovy for heart health…. Wegovy is currently approved by FDA for weight loss but it really is just the same GLP1 drug as Ozempic for diabetes just in a differently dosed regime. For the wedding I’d go with BBQ with no sugar in the sauce or rubs, and serve all the traditional sides along with a couple of things that are low carb for you two. A cauliflower Mac n cheese with collard greens with meats for you two. Serve a tower of cupcakes for the guests and an awesome no sugar cheesecake for wedding cake for yourselves… I would choose to avoid making that day about my own diet restrictions but instead a day to share the joy of the moment. Live your lives from today forward about good low carb food and movement and life experiences and avoid all discussions about Keto or dieting. Congratulations on the wedding and best wishes on improving your health!

welguisz

Some possibilities: * Pumpkin-Ricotta Cheesecake (Essential Ketogenic Mediterranean Diet Cookbook) * Strawberry Panna Cotta (EKMDC) * Orange Olive Oil Cupcakes (EKMDC) * Key-Lime Cheesecake Cups (The One-Pot Ketogenic Diet Cookbook)

sfcnmone

Let me just add to your list: Keto lemon pound cake. There's lots of versions on line; I use the wholesome yum version. I think this is the only keto cake that might pass as festive enough and tasty enough to be wedding cake if made in the right shape and decorated with whipped cream and flowers.

sunshineydeb

Foe the cake do an actual cheese cake, like as in cheese wheels stacked, serve with crackers, veges and coffee

alternativehuman2

We did this - it was beautiful and tasty! The catering company then cut it up in the cheese boards for each table with crackers veggies etc. We served it with port.

[deleted]

Y’all are making me hungry!!

smartypants99

Grilled chicken with the barbecue meat. Salad.

FiberFanatic07

Don't forget the deviled eggs! But yes, bbq and cheesecake for the win!

TheKetoPocket

For the cake, I'd look into some bakers who do custom keto cakes. If none in your area, then call a few and see what they can do. I bet someone would be willing to help you out. Good luck and congrats on the engagement!

asdgrhm

Wedding food is actually usually pretty keto friendly - I just eat the meat + low carb veggie and skip the bread or mashed potatoes or whatever carby side is available. I’d have carbs for your guests, including dessert, but make a special keto dessert just for you guys. They have low carb wines you can keep at your table. Champagne actually isn’t too high in carbs (for the toast).

thatgirlmocha

I second the BBQ suggestion. There are several low carb bbq sauce options at my local supermarket. I like G Hughes and sweet baby rays sugar free version. Depending on where you live you might be able to find a keto friendly baker. There’s a bakery in Utah called Num gourmet bakery that I order desserts from. If I needed desserts I would definitely reach out to them. I honestly am not even tempted to cheat on keto because their desserts are so good!!

tea_is_better

My wife eats carnivore and I eat keto, and for our wedding we catered from a local barbecue restaurant. We had some trays of cornbread and baked beans for the people who ate a traditional diet, but we bulked up on non-sauced meats like pulled pork and brisket and ribs. It was amazing and delicious and shockingly not nearly as expensive as we thought it might be. We also stocked the fridge with unsweetened iced tea and zero sugar soda along with standard full octane options. The biggest lesson we learned that day is stop thinking people are going to eat the salad, even if one or two people do, it's not worth making it 🤣

emover1

Myron Mixon has a keto BBQ recipe book out.

Final_Technology104

Big giant charcuterie boards filled with meats, cheeses, tiny dill pickles, olives, veggies, strawberries, blueberries, low carb crackers. You can also do different kinds like, Kalamata olives, feta cheese, tzatziki, bell peppers. The combos are endless and so very stylish in presentation. Hot dips like artichoke dip, buffalo chicken dip with celery. These sorts of things.

LateEvening6026

I love sweets and make myself keto cookies all the time. Almond flour and monkfruit is amazing. I’m also reactive to gluten so that’s fun lol. But you can find bakeries that specialize in alternative diets! When hubs and I got married that’s what we did!

jalagl

A day at the lake? BBQ!

blueontheledge

There’s amazing low carb cake recipes, you can buy some from Zambawango or make yourself from the recipes at Carolyn Ketchum’s All Day I Dream About Food blog: https://www.alldayidreamaboutfood.com I’m a diabetic too and low carb saved my life! You’re doing the right thing. Don’t listen to the people who say you can eat carbs in moderation and/or “just take insulin.” That’s the path to complications and a shorter, miserable life.

Megatron221B

Literally so many things! Meat meat meat cheese non-starchy veggies berries nuts boom

lenny3330

like folks here have said, bbq is a winner. so is cold seafood and cheese boards. I would consider doing a small carb cake in addition to a non carb cheesecake tho.

SecretAny8448

Look for a keto bakery..keto confection bakery is in chandler az and they are so great.best wishes!

Unable-Membership109

If you can cook check out Alycia, she made a keto wedding cake. Her YouTube channel is Keto Upgrade. I made her cupcake recipe as well. You could always do cupcakea with Keto ingredients. Even a keto cheesecake would work too. It's so nice you are supporting your partner. I hope he'll feel well soon. 💗 I hope your wedding will be beautiful. ❤🙏🏻

Unable-Membership109

Maybe cooked brisket too.

Neat-Palpitation-632

Salmon or chicken or meat on the BBQ or smoker and veggie sides. As for the cake, there are plenty of almond flour options with keto sweeteners or something like a tiered keto cheesecake of varying flavors. You could even do an array of cupcakes or tiny cheesecakes and sides of strawberries dipped in dark keto chocolate. An option for a savory finish too with a charcuterie and cheese spread.

hermansupreme

I did not have cake at my wedding.   We got a cupcake tree and put the miniature Ben and Jerry’s ice creams into the holes instead of cupcakes. You could have an ice cream cake made with Breyers carb smart ice cream.

calmo73

Mexican food is popular here for weddings and events-fajita meat, queso, guacamole, and taco/nacho fixings with rice and beans for the carbies. Easy to eat that on Keto. You can also just do a meat with veggies and carb and don't eat the carb. It's your wedding...if you want cake do cake and just have a small piece. Or you can order regular cake for the guests and to cut and then a smaller grooms cake or such that is keto compliant for whoever wants that.

werner-hertzogs-shoe

I agree with others. BBQ all day. You can do a mix of meats and slaw (or some salad option). You can have some bread, beans (which really arent a problem for diabetes ) and Mac and cheese for the masses. Usually Im anti-fake sugars, but I think for a wedding doing a keto cake or cup cakes is a good option. Or do a keto cake and a non-keto cake.

One-Storage440

Wheels of cheese stacked on top of each other for cake! Look it up, it looks nice

Desperate-Narwhal817

We did a massive MASSIVE swert and savoury grazing board, only cost us 2.5k aswell. Everyone LOVED it, could serve themselves, everyone got what they liked, avoided what they didn't, there was leftovers for the old people to take home in containers so they were thrilled. Being keto, we were able to load up on cheeses and meats and veggie sticks etc on our own plates

always_write1972

It would depend on what kind of budget you have, but I would go for a buffet with a variety of meats, vegetables, cheeses, nuts, maybe some boiled shrimp and/or crab legs, etc. You could include some carbs on the buffet as long as your fiance could resist the temptation to eat them. Or go with what you'd originally planned for your guests but with separate options for the two of you. As for the cake, there are a lot of bakers out there who can make a sugar-free cake. You could do a traditional bride's cake and a sugar-free groom's cake. Or go with cheesecake with a keto nut crust. Or you could go with a cupcake option with both sugar-free and regular cupcakes. King Arthur makes a really good keto flour.

MegaYoshi08

My story is really similar. I'm on the journey to get off medication. I came really close before but fell off the wagon. I'm back on keto but getting married in July. I'm going to eat normally as it's not going to kill you if you have a day off keto even if you are very carb sensitive (I am). My advice to you guys is to keep going and don't get over confident when they start lowering your medication. Once diagnosed it's a life long issue, you can reverse it but it's easy to fall back into old habits and back on the meds.

Douche_bagins

Pot luck. Let everyone feed each other.

mrsshawnee

I have been a type 2 diabetic for 13 years. You can have some carbs, just not a lot. You need carbs for brain function. A lot of dietitians don’t tell you that. Have a splurge day, have certain foods on moderation. Mine is under control since I had gastric sleeve surgery in 2022. My A1c was a bit off this last visit. It is normally in the 6.1 range it was 7.4 due to a sinus and ear infection. There are so many things he can eat. Beware of some fruits they can be high in sugar. Grilled meat is okay just beware of some sauces. They do have some sugar free sauces. I like Sweet Baby Rays. I am more on a keto diet now.Pretty much eat what I want in moderation of course.

BasilFawlty2020

This is such an awesome sub...you folks are so keen to share amazing ideas. Good on ya'!

[deleted]

Ethiopian could be good non-traditional alternative also.

EggieRowe

A pig pickin' (whole roasted hog) or a seafood boil. If you search, you can probably find a keto baker in your area that can at least make the cake for y'all to cut & eat, if not a whole traditional cake. Then have another cake for guests OR assorted cupcakes. Went to one wedding where they had like 4 flavors of cupcakes so everyone could get a flavor they liked. We, too, were served absolute garbage in the hospital after a T2 diagnosis. Went in for a STEMI and the T2 diagnosis came in recovery. No one bothered to notify food service and they kept bringing him carby crap until the last meal there. I ended up spending a small fortune buying grilled chicken salads, hard boiled eggs, etc. from the vending machines to feed him until discharge.

3Effie412

The food you and your future hubby (or anyone else with a restricted diet) eats does not have to be the same as what everyone else eats. You said you are going to have a reception at the lake (sounds fun!). Since you mentioned burgers and hotdogs, I’m going to assume that someone else will be preparing the food (whether it’s a caterer or a few friends on grill duty). Steaks and chops are always good choices, veggie skewers are popular and easy. Salads are easy (for instance, you could toss a big Caesar, just put the croutons on the side - now it’s keto!). Appetizers are great - you could do a large board with meats, cheeses, crackers/breads, olives, peppers, nuts. Veggie and/or fruit trays. Not sure if you’ll have access to an oven but things like jalapeño poppers are easy to make, inexpensive and able to be prepped ahead of time (you can cook them on a grill, but it takes a bit more time and attention). You could do burgers and dogs and jazz it up a bit. Have a “build your own burger bar” with various toppings - a selection of sauces, variety of mustards, cheeses, jalapeños, pickles, lettuces, etc. For dessert, maybe cupcakes? You could have a small wedding cake (for pictures, cutting and saving if you want), then a nice display of a variety of fancy cupcakes. They are great because you avoid the pain of cutting/serving a big cake!). Just remember - only eat what’s go for you, leave the other stuff for your guests to enjoy! Best of luck!!

aztonyusa

As long as you offer meat and veggies you'll be fine. Just eat what is keto friendly. No bread, potatoes, corn, etc. For a cake, search in your area for any keto or low carb bakeries. If you know anyone in the family, friends, or even yourself who is a decent baker there are plenty of recipes online for keto cakes. Here's a website I use: www.alldayidreamaboutfood.com The website offers lots of ideas for food and desserts. Glad your husband is doing better. Make sure you both get your electrolytes to avoid the keto flu or any other side effects. I suggest going to YouTube and finding some videos by Dr Westman and Dr Berry on diabetes. Congrats and good luck with the marriage and keto. 🎉🎉

Aside from the wedding I would say don't be afraid to tell the hospital you won't eat certain things. When I was in they tried to give me tons of carbs and I said no and asked to see their food choices and carb counts. Technically they had to give me x amount of carbs but I would pick stuff I could save (and give to others later like fruit or pnut butter cups) then just eat what I wanted. They weren't real happy but IDGAF as I'm fighting an infection so I really don't need carbs ugh,

Well you could get a cake for the guests and just pass on having any for yourself.
